Habanero peppers at the greenmarket?
Ted Blew (Oak Grove) at Union Square has great habaneros but I haven't seem them yet. I think its pretty early in the season to get hot peppers (unless you want the actual plant to grow on your own). If I recall correctly, they usually show up in late July.
How to store Oven-Fried Chicken to serve later or next day
After cooking, let it cool for a bit on a wire rack, the air circulating around it will prevent it from getting soggy. After it has cooled down, then transfer it to the fridge.

No difference. Its like cooling yourself off by rinsing under a hose/sprinkler vs. jumping in a pool. You will eventually get to the same place, its just a matter of efficiency.

It was definitely not fried. Frying indicates it was cooked in fat, either fully submerged - deep fried, or partially submerged - pan fried.
If anything it was griddled. Since no fat was added, there should be no caloric difference between using a cast iron skillet with no added fat vs. broiled vs. grilled

My standard cold-rise time for pizza dough is 4-5 days, so yes you can do it.

dirt and grime, no? I can't say I've ever gotten a piece of meat from the store that was dirty, and I'd think twice about buying if it did.

There is no need to rinse it either before or after salting it. One of the benefits of salting it, rather than brining it, is that the skin will be dry and crisp up better, this would be undone by rinsing it.

Shame on your for not recommending the jalapeno mashed potatoes too. and i didn't love the gnocchi either. But you are right on point with the special sides, during the summer they usually have some sort of creamed corn pudding with pancetta and black truffles which is stellar.
I'm also a ribeye guy but always order it without the herb butter on top (literally a silver dollar size piece of unmelted pat of butter which detracts from the steak)

Of course. At both Katz's and 2nd ave deli, when you order at the counter tell them you want it to go and they'll wrap everything up.

The buffets are only during lunch. My two favorites are Saravanaas and Dhaba.
I haven't noticed the slow service at Saravanaas but it does have a tendency to get crowded, so if they don't take reservations, it may be tough to get a large table. Dhaba, even though smaller, does take reservations, so it might be your best bet. Its a bit more expensive than the rest, although not appreciably so. They also have lots of options for a vegetarian and actually my favorite dish is a vegetarian dish, paneer kali mirch (spicy dish with paneer). you can easily get out of there for under $40 per person.

When I go, I always do the sushi omakase and always order the octopus appetizer and one of the soba noodles and then supplement the sushi omakase with a few additional pieces based on recommendations from Chef Masato. That plus a few beers//carafe of sake always comes out to less than $300

Then unless your sauce/toppings are too wet (or are left too long on the raw dough before cooking), if you move your stone to either the bottom rack or even the middle of the oven, you should have better results.

Before buying a new stone, move your stone up a rack and see if that helps. It's also possible that your pizzas are too thick or you are adding too many toppings or you have too many wet toppings. Ay of those would prevent the top from cooking. How long do you cook your pie a for? At 550 degrees on a stone that is preheated for an hour, my pies take 6-8 minutes tops.

Agree with everyone else with Molly's (burgers or shepherd's pie), Blue Smoke (burgers, beef ribs), Waterfront Ale House (burgers, texas dip, onion soup, wings) and I'll also add:
'inoteca or iTrulli (or the attached wine bar) for Italian.
Rare is another place for burgers, although far from my favorite.
2nd ave deli on 33rd street btwn 3rd and Lex for pastrami or corned beef sandwiches.
