Which Gramercy Tavern Gingerbread/cake recipe?

I think that may have been part of my disappointment. Because I love ginger, and this didn't have the taste I was looking for.

I will try that (thanks), because we do have an Indian store. It was tough to buy....

and LOL on 'none-too-fresh spices'. I do that too. I leave spices until I use them up. (I did have fresh spices for this, though). Best buy ever: whole nutmeg. Love using that.

Everyone liked it, going to try more after dinner tonight.

ETA: also served it with whipped cream, just lightly sweetened.

Which Gramercy Tavern Gingerbread/cake recipe?

(Thanks for the advice, PaulJ and Meatn3)

I tried it with the Extra Stout and it seemed to work. However, the cake just didn't do it for me, and I love ginger. It needed *something*. I may try it again (I still have stout--even after having to do the molasses and stout twice because the first time I put 1 1/2 T of baking soda...). And the cardamom was $13. for 1/8 t. Shesh. But I think I might try it with candied ginger instead of raw ginger. I really like the idea of seeing the bits of ginger throughout the cake.

I used a Bundt pan and buttered and floured it. And then sprayed Pam For Baking. Overkill? Maybe, but it didn't stick.

Has anyone made this with Guinness Extra Stout? The store had Extra Stout and Draught. I wasn't sure of the difference, so I bought Extra Stout. Making this tomorrow.

Do you wash your dishes before you place them in the dishwasher?

I appreciate the words of encouragement! It's nice to know it isn't just me!

And we tried a different chore.... She says she knows how to clean the floors. They've been done twice. In 6 weeks. and not very well. I've never seen a household where a teenager doesn't have a daily chore. Drives me nuts.

(We're on the 1 1 /2 year plan... her father has already said after graduation--she'll be 18--she will have to move back in with her mother)

Do you wash your dishes before you place them in the dishwasher?

I appreciate the ideas. This has been an issue for over a year now. (there are others). And now I'm so mad I'm not willing to do anything to make it easier on her. I had told her once that if the dishwasher was empty, then I could clean as I go. So after dinner that night, she walked in, looked at the plates, decided there was not enough that had to be done and just walked back out. Yes, we have a major power struggle going on. She's 17. (What makes it worse is that this is not an issue I had with my own son--who cleaned the kitchen from the time he was 12. And we had an even worse dishwasher). But I do appreciate the ideas. I like that idea when I'm storm-cooking. (Cooking up a storm!).

I make sure there is no food on them before anything goes into dishwasher. (It's not the best dishwasher). However, teenage stepdaughter doesn't seem to understand: it's a dishwasher, not a disposal. I got so tired of finding food on glasses. Her father and I clean the kitchen after supper now.

How come my tuna fish never tastes as good as sandwich shops?

I like Cooks Illustrated's tuna.... They added olive oil heated with sugar and onion to the usual suspects (well-drained tuna, mayo, celery, pickle relish, mayo).....

How come my tuna fish never tastes as good as sandwich shops?

Someone brought tuna salad at work (for sandwich day), and everyone went NUTS.... She used Duke's... that's the only thing she did differently than anyone else. It was awesome. Just the mayo, pickle relish, and Duke's.

What would *you* want from the food pantry?

I always buy the healthy stuff, but I also include cookies, chips, something not-so-healthy, but good for the spirit.

(I had to go to a food pantry 27+ years ago... and the junk food made me feel like a real person, not a lowlife).

Desperately seeking salty pie crust

I added Kosher salt to a graham cracker crust recipe for cheesecake.... and it was AWESOME! It's become my new crust for cheesecakes.

I haven't tried it with other types of pies, but I bet with a chocolate/nut pie, it would work.

I love the salty/sweet combo.

BAKING MULTIPLE GINGERBREAD HOUSES...

I did that. It was so fun.

And then my 3 year old took a BITE of the styrofoam Christmas tree decoration.

Which, 25 years later.... is my FAVORITE Christmas tree decoration.

(so.... make sure the kiddies know which ones are not for eating, unless you want the cuteness!)

Gas Oven Broilers - Do Any Really Work?

I dunno.... I'm afraid to use my gas-oven broiler. It's so close to the floor! Why can't it be up top, where the broiler belongs!

It's been 3 years.... so many things I haven't cooked.

Thinking about buying a hand-held torch thingy...

A less-sweet pecan pie

I've made that recipe, It is AWESOME. I love it, Maple syrup is incredible. And the bourbon whip cream that goes with it puts it over the top!

Your Thanksgiving Dressing/Stuffing?

Small bite size pieces; and if they were regular potatoes, then I peeled them; if they were red-skinned potatoes, then I didn't. I just sort of made it up as I went along, because I had read (from someone on here, prob'ly), about putting potatoes and sausage in their stuffing. And any time I can add potatoes to anything: I'm happy.

I sauteed the potatoes a little, because I like the color, and to cook them a bit, then just added them to the rest before cooking. (I cooked in a crockpot for about 4 or so hours, maybe on low?). I was definitely winging it!

I'm doing this again this year.

Your Thanksgiving Dressing/Stuffing?

Last year, I made 2. The traditional cornbread, and one (using Pepperidge Farm Stuffing), that I added sausage and potatoes to. The sausage and potato stuffing was AWESOME!

Good caramel recipe for a cake filling?

I hope this isn't too late, but the current America's Test Kitchen "Best Ever Recipes" has a recipe for Caramel Cake with Caramel Frosting that looks yummy. And they've got the frosting between the 2 layers of the cake, so it doesn't look like it would be runny. And the Lane Cake a page over looks awesome as well. :-)

Poached Chicken Recipes?

I made this and it went over VERY well....

http://www.deepsouthdish.com/2009/02/...

It does have a can of cream of chicken soup in it, but I'm okay with that in this dish. I know some people don't like it.

Or just regular chicken and dumplings...

Chicken quesadillas

Or Cooks Country recipe for Chicken A La King, served over toasted french bread pieces...

Silly question: Do you cook differently when 'dating' vs. when 'committed'?

Dating: I cooked company food, cute food.

Living together: I cook food I grew up with (slowly adding to the company menu).

Engaged: we're having hamburger patties with gravy baked in the oven.

I'm not slurring the hamburgers--I'm really looking forward to them--but I've noticed I cook more down-home.... not getting any complaints, and I don't think he's noticed the change.

How does your cooking style change?

ETA: I read this to him, and he said: "Why would I complain if someone else is cooking?"

I could not be with a person who is not open to food adventures! :-)

Fried chicken in Crisco

Also, french fries. and you can save it in the fridge to re-use. I know people who have done that frying chicken, but I have not. Only frying potatoes and onions.

I just learned how to make a grilled cheese sandwich

I use mayo instead of butter, and cook them in the oven (because I want everyone to eat at the same time). 350, 8 minutes on the first side, 4 minutes on the second. So easy, and I'm not taking forever to cook all the sandwiches.

Need help with brunch menu

I know this is well past the time of your brunch, but for future reference: the Aidell's Mini Chicken and Apple Sausage do not have pork casings. The larger ones do (I think, because the label doesn't say that they don't), but the Minis do not have any pork. And they are yummy. :-)

The Single Most Overrated Dish

FriedClams got it... It must be the Amorosos Rolls..

They just have a texture that's different from French bread, Italian bread, any sub rolls I've ever tried. It didn't get soggy, it didn't fall apart, it was just plain fantastic.

I've tried to find recipes online for it, but have not found any.

No, that's not it. I have the book, and love it. The cheesecake recipe is the one I use, but I changed the crust--adding Kosher salt, based on another recipe. awesome. May not be authentic, but it is yummy.

But I appreciate the thought!

Kitchen Nightmares -- Amy's Baking Company Scottsdale -- Spoilers

So I just spent an hour on this website.... Too funny. I'd go there just for the website alone. Pizza looks good, and I'm not a real pizza person. And I'm in NC.
