i used to love them but i think the quality has gone down, or i've just gotten used to better burgers.

its not bad, but for the price you can do a lot better.

make sure to get a rewards card, you get a free burger during the month of your birthday. that's the only time i end up eating there.

i can't believe its been 3 years since i moved away. i want to make a weekend somewhat soon. i can't see everything, i'd want to see some old friends who do the mom and pop places.

say you were leaving san diego. where would you want to spend your time.or what's really cool that has opened up recently that's worth a trip?

i know you're not supposed to ________, but i do it any way.

eat food that has been left in the danger zone. i'd never serve it to someone, but i'd do it cause i'm cheap. i'd rather chance food poisoning over throwing out things i forgot to put in the freezer/fridge

Baja Fresh Vs Chiptole, a strange tale

its franchise control IMO. baja fresh was started in somewhat of my home town and the originals were amazing. the portion size was huge (as an estimate, the burritos were 3 times bigger), and quality was consistent and great. if you happen upon any of the original stores, while not as amazing as when it first started is still tasty.

it expanded after being bought out by i think wendy's? whatever they opened just sucked. even in ca.. they're just gross.

i also miss the little things they did like grilled green onions/scallions and lime with every burrito.

usually chipotle has better sourced meat. they care about organics/sustainable, but i'd still eat at baja fresh any day. burrito ultimo with steak, i can eat every day. mmmmmm

why use agave nectar?

that's why i use it. in juices/ alchoholic beverages, its my sweetner of choice. simple syrup would work too.. but this is just easier to have on hand.

yeah i have.

its totally anecdotal, so i didn't include it in the op. ca burritos are my favorite, so i search them out. places that offer them usually have menus that mirror those of the san diego style restaurants and not those of the local mexican menus.

it seems more of these places are spreading to my area recently in the last year or so.

i guess a better title would be if sd style mexican food has a name.

not exactly where or how to phrase this.

i've lived in la, san diego, spent a lot of time in the bay area and now live near sacramento.

the unique things that stand out are "mission style" burritos from the bay area, and sd's rolled tacos/ca burritos (carne asada, fries, sour cream, guac) /fish tacos.

is there a particular name or style associated with the san diego type food? it seems to be spreading out to sacramento at least in the last couple years but that's just anecdotal evidence

Stupid question of the day - spicy dish "over reduced" WAY TOO SPICY

if it happens again, add some water and some sugar and reduce. the sugar cuts down on the spice quite a bit.

been on it a couple times before the internet debunked it. it usually drops me about 10 lbs, but most of that is apparently water weight.

good luck, if you're going to make the life style changes afterwards it'll help keep the weight off/lose more.

yeah, i've done the cornstarch and replicated his method. i guess i didn't word it right, but there was good coverage. just it was a thin crispy coating instead of a nicer thicker fluffier type.

advice on teaching a kid to cook

thanks for all the wonderful suggestions and replies! instead of replying to each individual post i'll just make one general reply.

one thing is time is an issue. i don't know how many times we'll get to cook together so i wanted to make the most out of our times together. they live about 25 minutes away and if i'm cooking for them its easier for me to do a lot of prep/cooking at my place and take the dish over.

great idea to start baking first to get her confidence up. right now, she doesn't think she can do anything at all. i only thought of knife skills first because my aunt told me to make her slice some cherry tomatoes in half and she had no idea how to do it. we can work in some eggs as well to give her more successes.

very true, she's not a kid and is a teenager now. but cooking wise she's similar to the curious 11-13 yr olds people have mentioned here. she doesn't have fancy tastes at all, she sticks to simple items like chicken breasts or whatever has a ton of cheese. good point to give her some options though, she and her sister hates making decisions.

advice on teaching a kid to cook

the short version, what exercises/items would you use for teaching techniques?

a little background. my cousin is 16 and has never cooked before and i want to teach her. i have what i would describe as advanced home cook skills. i'm by no means a professional but i can handle myself in the kitchen.

i was thinking a lesson plan like this:

lesson 1)
knife skills. use carrots, bell peppers and onions to show the different way to slice/mince/dice. time permitting showing how its the trinity and is the base of many dishes

lesson 2)
baking basics either pancakes or cookies. show her measuring, following a recipe and how to combine doughs.

lesson 3)
start cooking with help only of techniques she doesn't know yet and minor supervision. i'll have her pick a menu she wants to have for dinner and find an easy to follow recipe and have her her follow it. repeated as many times until she feels comfortable doing it by herself.

lesson 4)
medium baking skills bake and ice a cake

Pizza Stone in Gas Grill - What's the trick?

the best grilled pizza method i've seen is to lay the dough on the stone. let cook for a couple minutes. then flip. let cook again for a couple minutes, flip back. now you dress the pizza. everything has to be prepped for a for quick melting since the dough is pretty much cooked and you're melting the cheese. you don't have to put it back in the grill if you don't want to, you can finish in the oven.

the double flip is because you get that great blistered crust on the side that hits the stone first. it gets lost under the sauce/cheese and the second side never develops the same level.

Top Chef Masters "You May Now Feed The Bride" (8/1/12) [*SPOILERS*]

that's what i want to know. even disregarding the horrible form i thought the actual taste had mixed reviews. i was shocked at him not being the loser. hope the judges take a lesson from this. there was an earlier season of regular top chef when they used a box cake for the wedding cake for just this reason. they weren't going to have their cake be a failure and were killed by the judges for going box cake.

In defense of Gordon Ramsey

you have to separate when he's trying to teach and when he's playing a character. hell's kitchen is the worst case of getting to know him. you see a bit show through when he helps the extreme longshots who make it far in the show. he usually offers to pay for culinary school for them.

watch some of the kitchen nightmares from the bbc series. he truly cares about the people, and wants to help. yeah he curses but who cares? its rarely in the sense of degrading people..

art has always seemed very down to earth/friendly anytime i've seen him before last night. he was annoying/rude and condescending.
