Strawberry Whipped Cream Cake

I made this cake for a Christmas Eve celebration. I was extremely pleased with the results and everyone loved it. It is a great end to a big meal because it is very light. I followed the directions for the cake layers to the letter. The layers were pefect -- I did not have to slice them to make the tops even, they were tall and light but moist and flavorful. I did need extra filling; I recommend making double the amount of filling -- but it is so easy to make, it is not a problem. Standing the strawberries up is a good idea, it increases the strawberry-to-cake ratio nicely. Next time I will probably make double the amount of strawberries, too, for passing. I also added 1 tsp of dry gelatin disolved in 1/4 cup of water to the whipped cream frosting to ensure stability. I don't know if it was needed, but the frosting has held up perfectly for more than 4 days now.
