Sauteeing garlic

Another trick in addition to the above (all good tips: only sautee it for 30 seconds or so alone, lowering the flame and adding it later on in the recipe) is simply take the pan off the heat when it starts to look/smell like it's turning brown. You can't salvage burnt garlic once it turns on you but you can pull the pan off the heat before it gets to that point. Adding additional ingredients will also lower the temp in the pan and stop the garlic from burning.

I agree with the posts about Morimoto but thought I'd add the comment that the sushi is BORING at Morimoto. For an "iron chef" that pushes the envelope as far as wacky combinations are concerned, I was surprised when I ordered the omakase and got pieces of tuna, salmon, eel and a california roll. Are you kidding me?!
Again agreeing with the other posters, I think Uzu is the best sushi I've had in Philly. You get more for your money there than at Zento. I found Zento to be somewhat boring as well and way too pricey. Uzu at least has some fun and interesting rolls... and you can make your own combinations! Just be sure to make a reservation. With 18 seats, the place gets crowded, esp. on weekends.

Any opinions on the best place to buy seafood in Philly? I can't seem to find a seafood store that's really wowed me with the freshness of their fish.

Also... anyone know where I can get cockles (little clams)?

Best Pizza Union Square

Piola on 12th between University and Broadway. Great wood-fired pizza, tons of variety. Not a "grab-a-slice-and-go" place; reminds me of Italy not Little Italy.
