Brined a chicken overnight - is it ok to postpone cooking it?

American test kitchen brined a turkey and then let it sit uncovered overnight in the frig to get crispy skin.

Different pasta shape?

I am looking for mafaldine shape pasta, it's like a lasagna about 3/4 of an inch wide. I saw that on a cooking show and it looked good, I would like to find some. I am not sure if it's possible to get it in Canada. Anybody familiar with this pasta?

What to do with whole turkey

Here's what I do: I defrost the turkey just enough so I can remove the breast, cut up the legs into portions, cut up the bones to make soup. I wrap each breast half, and each legs and freeze, make broth. You can then have turkey anytime and make turkey scallops with the breast. It's a bit hard to do this while the turkey is partially frozen but it's well worth the effort.

Chicken Noodle Soup for a large croud

You have to decide how much noodles you want to serve per bowl. Then if you look on the noodle package where the calories are it will tell you something like 4 ozs is 1 cup cooked, then you decide how many serving are in the package. 200 soups divided by the amount of serving in one package will give you the amount of packages you need. And just make a little extra for good luck.

Christmas dinner for 40! looking for inspiration and advice.

For dessert you could make rolled cake one lemon and one chocolate and turn them into BUCHE DE NOEL [CHRISTMAS LOG] at the last minute you can put some meringue mushrooms that would be beautiful.
I have made boeuf bourguignon for 100 people, it's easy and can be made ahead serve either mashed potatoes and or buttered noodles
