Are there any 12" by 16" baking sheets/jelly roll pans??

I already have a Vollrath sheet pan in that size. I LOVE IT but it would kill me to use a size different than as stated in the recipe. Im using a foreign cook book and it calls for a 12 inch by 16 inch baking sheet or jelly roll pan. If I was making cookies then I would settle for any size. But the cake im making is a cake known for cracking when rolled so I wanted to make sure it was the perfect thickness so I want the exact dimensions. Im willing to have it imported if I have to. I could care less what the standard size is as Im sure a 12" by 16" pan exists.

I had a 12" by 15" All Clad but that 1 inch off bothers me. Sorry for being OCD on this but it just makes me feel better lol. I prefer commercial quality. I found a Chicago Metallic at 12" by 16.75" but that .75" extra. *shudders*

Cookie sheets wont work as I need the rims for a rolled cake I wanted to make.

Do you think Vitamix might be coming out with a new series soon

I was on Williams-sonoma and they no longer sell the Vita-mix 500 series. weird. Maybe they're expecting a 600 series to be coming out.

What copper cookware brand do you recommend (Mauviel or Falk)

I originally intended to buy the Mauviel Professional line of copper cookware from Williams-Sonoma. It is stainless-steel lined (im not interested in retinning) with cast-iron handles and the copper is 2.5 mm thick. I found out about Falk which pretty much has the same characteristics except it has a brushed rather than a shiny finish and unlike the Mauviel, is made in Belgium rather than France.

Vitamix Professional Series 500 Blender or Magimix by Robot-Coupe 5200 XL Food Processor?

I have a food processor and a blender already and use them both equally. Like I said, since i used both equally as often picking based on how often I would use them doesn't really work well here.

Okay...so mommy dearest is asking me what I want for Christmas. :D

Unfortunately I have to pick one. *super sad face* :((((

We have both a food processor and a blender at home but they're both equally crappy. I use them both regularly so picking based on how often I use a blender and food processor is out of the question. Which should I ask for? I was originally going to ask for these amazing Dior Homme boots but Williams Sonoma is having a sale so Im taking my chance on the Vitamix and Magimix which I've been fantasizing about for ages. They're 25% off if my order is $500+.

So my pepper mill broke...and I need a new one (Unicorn Magnum Plus Pepper Mill vs. Peugeot Olivier Roellinger Pepper Mill)

yeah...Peugeot has a heritage of coffee mills so im thinking this a is a special anniversary edition paying tribute to it. I was also looking at their Châtauneuf pepper mill but it seems the grinding mechanism breaks after a year. Had I not read the reviews about this I would have been all over it.

It seems that the Unicorn Magnum Plus pepper mill has LOTS of positive feedback but I have one problem. Its butt ugly. :(

Im sorry...the instant I saw it, I was like "Kill it with fire". I was willing to sacrifice looks since the reviews were so positive that I almost bought it. But then I saw the Peugeot Olivier Roellinger Pepper Mill. It looks effin amazing. It has this old world charm that I love. Im sure it grinds well but im sure most of you would have a problem with its ergonomics as its a cube. Then I remembered that a crank isn't that hard to use.

What do you think of the Kitchenaid Food Grinder Attachment?

Is it sufficient for grinding meat? It looks like plastic to me and just doesn't look like it can turn a sirloin steak into ground sirloin.

I doubt Thomas Keller would fall for a marketing ploy. I dont think Animal Farm would need a marketing ploy though seeing as Animal Farm almost exclusively sends all of their butter to both of Keller's restaurants. Per Se and The French laundry so the only way to taste it is by paying the $250 (not including drinks) to dine there. His restaurants wouldn't need a marketing ploy either as it is nearly impossible to get a seat there. Now that annoys me. So basically, the whole website was put up to say "haha....you cant have any".

and lol...fine...i give in....im going for the Plugra haha.

Whole Foods at Union Square??? WHAT? I just went there and they didn't have any. darn. I'll go on and check with Eataly tomorrow in between classes. Im in the mood for fig stuffed pork loin right now.

Okay...you're the second to mention Plugra. It must be good. I guess i'll test both Lescure and Plugra by making two recipes of Brioche. Hopefully my family is in the mood for bread this upcoming week lol.

the special cows?....its just what you're told when you ask about the butter when you dine at Per Se here in NYC. The butter that comes from Animal Farm actually comes from a very small herd of of cows so I guess it makes them more special in the sense of sentimental value as the owner even goes as far to name her cows. Regardless of the fact of whether the cows have anything to do with the butter quality, Animal Farm butter is more of a cult butter which is why im fascinated as to why Thomas Keller swears by it. I used to think butter is all the same but he seems to be finicky about what he uses. I guess finicky is what gets you the honor of being crowned best restaurant in the world which is why i put so much trust in Keller who advises you to use the best ingredients you can find.

What do you believe is the best butter you can get

I was looking to buy butter to use when baking and noticed what a significant difference the type of butter you use has on taste. So now im in search of the best butter. I know Thomas Keller serves Straus butter and butter from special cows at Animal Farm in Vermont but im not sure if he uses this in his cooking or if these are purely spreading butter for the table. Then I thought, why not a French butter like Eschire butter or Lescure butter which I heard is widely coveted by pastry chefs in France and I even saw Gordon Ramsay using it. Pretty soon I found myself looking at Danish butters like Lurpak. Im completely lost. Right now im leaning towards Lescure but if you have any other butters you swear by, feel free to mention them. I was actually trying to find out what type of butter Pierre Herme uses since hes such a legend but that did no good.
