Where do I get the best ham??

A classic uncooked Virginia Country Ham is strictly an appetizer sort of thing, and a little goes a long way. You will have to soak it for hours depending on what level of salt you like, change the water every 4 hours, and brush the rind. Then wash it again.

Honey baked is a consistent product and much easier. Or get a cooked ham from one of the smaller purveyors, usually the same ones who have the country hams available.

Are you bringing the biscuits or crackers or whatever to serve it on too?

Help with sous vide boneless skinless chicken breasts

I recently received my Anova Precision circulator, and have been experimenting with it. I cooked thinly sliced chicken breast the other day at 140 F for one hour after the water came to temp, in a Ziplock that I had removed nearly all of the air from. I flipped the bag every now and then. They came out very tender and flavorful. I added a tiny bit of olive oil and a shake of Emeril's Essence to the bag before the water bath.

Good way to doctor up jar spaghetti sauce?

I used to buy a jar of Progresso Marinara sauce, then saute chopped yellow onion and garlic in a little olive oil, then pour the jar of sauce in and simmer for a while.

Yes, when I buy dried mushrooms, it's usually to soak, and then use the liquid to add umami to mushroom soup. I discard the rehydrated mushrooms

It's an ingredient in the piquant sauce I make for meatloaf. I put some on the loaf while it cooks, and have some to serve on the side.

Okra Roux

Interesting to see this, just the other day, I think it may have been on, I was reading about New Orleans and there was a sidebar explaining the difference between creole and cajun and that the former used traditional rouxs, while the cajun used okra as a thickening agent in the place of a roux.

Remember Gampy's Monte Cristo sandwich with the raspberry sauce?

Nice to hear fondness for this item. There's a bakery in my hometown in upstate NY that serves such a dish, powdered sugar and raspberry sauce and all.

A vegan, a person who's gluten free, someone with a nut allergy and an anorexic walk into a bar…

But when I saw the title, I knew I'd probably like it, and that it was probably braised carrots. So it does serve some use to have a familiar touchstone in the title.

What foods have traveled in your carry-on?

A big ristra of fresh chilies purchased in Santa Fe. I could smell them all the way back to D.C. Another time I brought back a whole muffaletta from Central Grocery in New Orleans. Then there was the canned cassoulet from the South of France.

I like Gordon Ramsay's method of making them in a small saucepan with creme fraiche. He takes the pan off the heat element a lot to insure they're not overdone.

I have a friend who began purchasing from Blue Apron last summer. Part of the reason was that I was convalescing from a hip revision at her house and she wanted me healthy and out of there ASAP! She likes to cook but hates to shop. At the time you had a limited choice from Blue Apron: either vegetarian, or meat, poultry and fish. She does not eat fish, so it was always vegetarian. It was pretty good. Now, they have moderated their choices so if you don't eat fish, you can choose dinners that include meat and poultry but not fish, and I've had a couple of those lately. There was a period in early fall where it seemed like they were giving out the bottom of the produce bin, but that has improved as of late. The dinners were supposed to be for two, but we found that we could invite a couple over we are friends with and have enough food for four. Some of it is fantastic, some not so much, but I liked the concept. I saw the guys from Plated on Shark Tank, and I couldn't see how their concept could succeed.

What discontinued products do you miss?

Progresso Escarole Soup seems to have been discontinued, I ate that a lot as a kid.
