$US100 for one person, I'd suggest; Taco Bamba in Falls Church for Posole Roja, Bahn Mi in Falls Church at DC Sandwich, Tonkatsu Ramen at Toki Underground (H St NE, DC), Pupatella in Arlington for pizza, a sandwich from Stokowski's in GeoTown.

Bucatini Pasta

The style of pasta most likely to get sauce on my clothes. It seems to whip around and with the hollow center...splat.

What sauce would your recommend for grilled asparagus?

It doesn't get much simpler than butter and a little salt. I ate it that way a lot as a kid.

Nay - Frozen Deep Dish Pepperoni Pizza - lots of carbs for very little flavor

Nay - Hot Dog Rolls - These are made in the split, "New England" style. I usually avoid their bread but didn't want to make a trip to another store. Stale tasting right out of the bag, which is why I avoid most of their bread anyway.

Yay - Butterscotch iced cupcakes - I haven't seen these in a long time but they're back.

Help with sous vide boneless skinless chicken breasts

I confess I did not check the temp. I performed the same thing since then with identical results. Moist chicken, with no pink. I think the lack of pink made me think it was OK for those experiments. I'll try the higher temps and use my digital therm to check the results next time.

Where to buy a variety of fresh chili peppers

"3 whole rich fruity chilies like Ancho, Mulatto, Negro, or Pasilla, stems and seeds removed"

I am assuming the recipe says something to the effect of "use one of the following types of dried chilies". Those four types are pretty much the same dried chili, and the Ancho or Pasilla varieties should be easy to find.

I think each of the four lines of ingredients intend to say something like "use one of the following".

Where do I get the best ham??

A classic uncooked Virginia Country Ham is strictly an appetizer sort of thing, and a little goes a long way. You will have to soak it for hours depending on what level of salt you like, change the water every 4 hours, and brush the rind. Then wash it again.

Honey baked is a consistent product and much easier. Or get a cooked ham from one of the smaller purveyors, usually the same ones who have the country hams available.

Are you bringing the biscuits or crackers or whatever to serve it on too?

Help with sous vide boneless skinless chicken breasts

I recently received my Anova Precision circulator, and have been experimenting with it. I cooked thinly sliced chicken breast the other day at 140 F for one hour after the water came to temp, in a Ziplock that I had removed nearly all of the air from. I flipped the bag every now and then. They came out very tender and flavorful. I added a tiny bit of olive oil and a shake of Emeril's Essence to the bag before the water bath.

Good way to doctor up jar spaghetti sauce?

I used to buy a jar of Progresso Marinara sauce, then saute chopped yellow onion and garlic in a little olive oil, then pour the jar of sauce in and simmer for a while.

Yes, when I buy dried mushrooms, it's usually to soak, and then use the liquid to add umami to mushroom soup. I discard the rehydrated mushrooms

It's an ingredient in the piquant sauce I make for meatloaf. I put some on the loaf while it cooks, and have some to serve on the side.

Okra Roux

Interesting to see this, just the other day, I think it may have been on Saveur.com, I was reading about New Orleans and there was a sidebar explaining the difference between creole and cajun and that the former used traditional rouxs, while the cajun used okra as a thickening agent in the place of a roux.
