Unagi sauce; what for?
Unagi sauce is truly only for Unagi, if you want to be proper in Japanese Tradition. However it could be used for anything you might use Teriyaki sauce for. The stuff you buy in bottles here is just the base for the actual Unagi sauce. What makes the final sauce is the dipping of grilled Unagi in it over and over. Sometimes an Unagi shop in Japan will use the same sauce for years adding more base to it as needed.
As with most Japanese sauces there are only a few basic ingredents for all. Soy Sauce, sugar, Saki, rice vinigar, and Dashi are the most often used by far. IMHO. The difference in tastes are the difference in proportions. Every Yakatori Master (Chef) has his own signature Teriyaki sauce and they are all made of the same ingredents, just different proportions. When I finished 2 years of independent culinary study in Japan in the 80's, my Yakatori Master gave me his recipe. The greatest honor one can receive in the Japanese culinary world. It ment he trusted me, as it's secret, he respected me, and he knew I was leaving and never coming back so I wouldn't give it away there.
