I make a dish similar to this every year. But I use Thick bacon, Hormel thick cut works best, and I stuff the bird with potato bread stuffing. While I thought it was the worst idea the first time I heard of it, it is the most amazing turkey dish. After you carve it, it looks like all the other turkey dishes, but taste a lot juicer. My in-laws have been cooking Bacon wrapped Turkey for over 50+ years. I plan to keep the tradition. In fact, it's in the over cooking right now.
