Cocktails before wine

Perhaps you might want to look at another dimension; time. Many people tend to drink "cocktails" fast relative to wine with a meal. Perhaps lingering over a pre-dinner drink with a bit of an appetizer would equate to what is roughly an equal amount of alcohol during dinner (also with food obviously). It may be due to my quite advanced age but I tend to think two hour dining is the lower limit of time to spend with friends over drinks and dinner and 3 is vastly better.

The meaning of "up"

I tend to agree with Wikipedia on this:

"In bartending, the term "straight up" (or "up") refers to an alcoholic drink that is shaken or stirred with ice and then strained and served without ice in a stemmed glass.[1]

This is contrasted with a drink served "neat" – a single, unmixed liquor served without being chilled and without any water, ice, or other mixer.[1][2] Neat drinks are typically served in a rocks glass, shot glass, snifter, or copita.

"On the rocks" refers to liquor poured over ice cubes, and a "rocks drink" is a drink served on the rocks. Rocks drinks are typically served in a rocks glass, highball glass, or Collins glass.

The term "up" is less ambiguous than "straight up", because sometimes the term "straight up" is used to mean "neat".[2]

The term "straight" is also sometimes ambiguous, as it can be used to mean either "up" or "neat".[2]"

is salt really heated to 1200 degrees F?

Actually, that's how our swimming pool produces chlorine to keep it disinfected. We do need to add acid every once in awhile but basically an electric cell disassociated the NaCl to Chlorine and Sodium Hydroxide. I do believe it's fairly common.

Eating at an empty restaurant?

A little different perspective........ we live on a Florida barrier island. Our population varies from about 6,500 full time permanent residents to maybe 30,000 people in season when you add up snowbirds, vacationers, and day-trippers. During our two off seasons (October is one of them) our town and restaurants, are relatively empty. But, it's the best time to enjoy what we have and it's the best time for chefs to try out new dishes. We, in turn, our new restaurants and our new menu items. Great food, low resident prices, friendly service, plenty of parking, great freebies! Restaurants appreciate local patronage to keep their staff on board during low seasons. It's a big win-win for everyone. LOVE IT. YMMV.

Favorite easy, healthy, seafood dished

Black Grouper as much as you wish

small amount of butter (1 tsp?)

heat skillet with butter just to bubbling
wipe one clove garlic in hot buttered skillet (optional)
add fillet skin/scales down
press it down with a spatula to keep it from humping up in the middle and to get a good brown on it.
keep at it until it is just opaque half way through
flip and cook it the same time.
time is a bit dependent on temp (medium low) and thickness (one half to an inch?)
cook until opaque all the way through plus about 30 seconds
enjoy and learn for next time

note: here, in Pinellas County, good, fresh black, less than 24 hours old, is about 20 to 24 bucks a pound. Or catch it yourself.

Fresh Seafood in Madeira beach and Tampa

I second Middle Grounds in T.I. for upscale semi-sorta upscale. Or hit Dockside Dave's right there in Madeira beach for the best around. You might also go up to Indian Rocks (couple miles up Gulf Blvd.) and give Keegan's Seafood Grille a try.It's a bit less upscale but very good. John's pass, in my humble opinion, is aimed a bit at tourists. Let us know where you go and what you think.

Laser thermometer recommendation? Are these thermometers necessary?

Helpful but not necessary. These are really IR (infrared) thermometers that use a visible laser to show you where they are aimed so you can be spot on to measure the temperature of what you think you are pointing at. They will tell you that a surface is up to temperature so you don't put something on too soon(searing surface) or let something (non-stick?) get too hot.

Get on their mailing list! Bogos on Tuesdays for the whole month! This month in my area was pork tenderloins, strip steak.

They do other sales too; like every Thursday if I remember right.

Everyone's likes are different. Try what you think you might like and get some regular items. We hit them every week or two.

Washugyu Ribeye Help

No pre salting/brining. Medium heat so as to allow time for the marbled fat to melt a bit. Salt to taste after grilling. No more than medium rare; maybe 120 to 125 and off the grill to rise 2 to 5 degrees over a 5 to 10 minute rest.

A new wrinkle in discussion about tipping

If it was your server and not one passing by I'd say you could tell him/her that the message offends you and you would like if different server or you could leave before you order. In my humble opinion if you stay and don't speak up first and then don't tip based on service you are being passive/aggressive and not full-on adult. If it is a server passing by your options, again in my opinion, are leaving or accepting your environment. I don't feel life is a game to be played deceptively. And, you can disagree with my opinion. I am not attempting to change anyone's mind I am simply stating my position and supporting anyone who feels the same way.

Oops! Should we have tipped?

Maybe a buck? Probably not. Shift changes happen all the time.

On the same Visa site referenced above,if you do a search for "minimum" you will find that a minimum of not more than $10 is permissible.
