No pre salting/brining. Medium heat so as to allow time for the marbled fat to melt a bit. Salt to taste after grilling. No more than medium rare; maybe 120 to 125 and off the grill to rise 2 to 5 degrees over a 5 to 10 minute rest. |

A new wrinkle in discussion about tipping If it was your server and not one passing by I'd say you could tell him/her that the message offends you and you would like if different server or you could leave before you order. In my humble opinion if you stay and don't speak up first and then don't tip based on service you are being passive/aggressive and not full-on adult. If it is a server passing by your options, again in my opinion, are leaving or accepting your environment. I don't feel life is a game to be played deceptively. And, you can disagree with my opinion. I am not attempting to change anyone's mind I am simply stating my position and supporting anyone who feels the same way. |

Slow cookers: What do you think If you like to experiment with a different use for your slow cooker you can buy an Auber or SousVide Magic PID controller, use your vacuum sealer or waterbath seal and play around with Sous Vide cooking in addition to slow cooking. 72 hour chuck is an entirely different thing than slow cooker chuck roast. Just make sure your slow cooker is a "dumb" one. i.e. simple rotary switch not a digital/microprocessor control. Modernist cooking from an old school appliance. |
