Farro Risotto with Asparagus and Fava Beans

Excellent - light and fresh flavor. I used spelt in place of the farro, edamame in place of the fava beans, and dried tarragon. Delicious. The spelt seems to take slightly longer to cook than is recommended for the farro, and did not "puff" as the recipe stated the farro would, but it was definitely delicious.

Red Lentil Hummus

Quite tasty. I threw in some cannellini beans that I had on-hand, which made up for the fact that I used a bit too much tahini. Simple to make and an interesting twist on traditional hummus.

Whole Wheat–Oat Pancakes

I just made these, and they were way too salty. I would definitely reduce the salt by 1/2 (yes, using kosher). I'm also not sure that baking soda is the right thing to use here- they tasted more like pretzels than pancakes.

Linguine with Squash Noodles and Pine Nuts

Delicious. I improvised with what I had on hand - parmigiano-reggiano, no herbs, a splash of lemon juice instead of zest - and it came out perfectly. I will definitely make this again.
