Stupid lasagna noodle question

thanks for this. it must be personal preference, too. i really do prefer the results of boiling the (fresh) sheets to not boiling.

Best restaurants under $30 for App and Entree?

there were no tapas or burritos. we chose to order the shrimp tacos, but for the same price you could order a non-taco dish, i believe. and it was $40 a person. i thought that was a steal with a drink. I think you could most definitely get an app and and entree there for $30

thanks. i do use whole milk ricotta. i don't drain it though. i don't think i over sauce it (i use more than when i boil the sheets, but it's not swamped -- memory could be failing though, it's been awhile). when i boil the noodles the result isn't wet or overly saucy. and after a brief cooling period holds its shape well when cut. i do only use fresh sheets that i make. I'd love to skip the boiling step. i'll try again.

i went to lolita on saturday night. my friend and i each had a sangria, 3 apps (quesadilla, guac, meatballs) and then we split the shrimp tacos (i'm normally not a dinner splitter, but we wanted to try a lot of things). with tax and tip it was $40. i was floored.

i always boil the lasagna first. otherwise i feel it tastes pasty. even with a ton of sauce. i make my own pasta sheets. they are practically merely dipped in the water for a second or two.

VitaMix Blender, is it worth it?

i have the tall 64 oz container, not the short wide one. and this one is just easier for me to get the peanut butter and hummus out. and it fits under my counters. which i guess is a pretty penny to pay for a little convenience, now that i'm thinking about it.

i don't think it's juice. i call them smoothies. today was an orange, cran, and some frozen pineapple with water. i'm not a huge sweet tooth.

Blanching vegetables before roasting?

i do it for potatoes. a quick steam in the microwave. dry em off. gets them really brown and crispy on the exterior and nice on the inside. also cuts down on the roasting time.

the AB recipe is great. the cooling is a bit of a drag, but at this time of year, it's usually cool enough to let it chill out on the deck.

brining is fabulous, imho. the leftovers are amazing. get some home depo five gallon buckets and alton brown's recipe. i sub cider for half the stock. i did 2 14 lb fresh turkeys that hadn't been injected with anything for thanksgiving. delicious. almost zero leftovers. i had 17 guests

i spatchcocked a turkey on sunday for another mini thanksgiving. unbrined. it was an on sale butterball. it was perfectly cooked, but not as flavorful, imho. and the leftovers weren't was awesome. those might be functions of tom turkey being a butterball. but the AB brine imparts a flavor to the meat other than sodium. and i happen to like it.

crock pot bit it

the insert cracked straight thru. i don't know if it was thermal shock or what. but it died nobly making its last batch of turkey stock last night. noticed the crack while cleaning it. never leaked. i'd just like to get a replacement insert. but the crock website says they're not available online. i got this one at costco years ago. came with one of those mini dipper doo dads. it's 6qt rival semi programmable brand.

ugh. what should i do? i use it primarily for stocks, chili, and corned beef. i don't think i need the one you can saute in. something simple. but when i add this one to my cart, the price drops to $40..... what say you, friends?
