that's a sure fire smoke detector setter offer! the oven needs to be immaculate, even then it's no guarantee!

Wolf vs Thermador 36"??

the super duper uber low simmer function works by the burner turning off and on at 30 second or so intervals.

chesterfried chicken! that's a chesterfried heart attack as a friend used to say.

Fresh Spring/Summer Roll Recipes, please

made them last night. they were delicious. dressed the veg slightly (carrots and cukes), tossed the noodles in a teeny tiny bit of sesame oil, added shrimp. used mint and basil and did add lettuce. they were pretty. and refreshing.

i used this recipe as a very loose guide. http://www.thekitchn.com/recipe-how-t...

thanks all for the help!

Famous Regional Food you find embarrassing or disgusting?

So weird, i was just talking about moxie this weekend when we were at a place on the cape that served it. i don't think i hate it, but i probably wouldn't seek it out. so i could probably do without. teddy ballgame liked it, right? (or at least shilled for it, iirc). it's like robitussin without the robotrip.....

Switching from side-by-side to french door fridge... help wanted!

it's wonderful i switched from a 21 cf top freezer regular door fridge to a 28.5 sf fd with an ice maker (no water). i feel like a rich person....all that space and ease of access.

that sounds delicious. i already have the rice papers, though. it would turn that into something totally different, but probably still pretty damn tasty, no? i'd love the crepe recipe if you have it handy....

I think this was a dish of the month, but my search skills are really subpar (or the site is wonky).... any tried and true basic recipes (veggie, shrimp, pork....) with good dipping sauces anyone would care to share?

ha! any recipe that suggests using surgical tweezers definitely qualifies!

Wolf vs Thermador 36"??

exactly. i resisted that temptation on my renovation. i knew that what i wanted was a 36 inch range with 6 high btu gas burners (no griddle) and one big oven. the appliance salesman was great and steered me to what he thought would be perfect for me. a 36 inch range with 6 high btu gas burners (no griddle) and one big oven. the base model that i got was self cleaning (which i won't use), had telescopic oven shelves, and convection feature. if it has a timer or a clock, i haven't found it yet, though! which is fine by me. the gravy was that it came with a free thermador dishwasher.....

36" Range Advice - Thermador vs Wolf

i also have a second electric oven that is 30 inches so i use that more often since it's smaller. it's the first time i've had an electric oven, though, and i don't notice any difference between the performance of either oven. i've used the therm for baking, and it works wonderfully. and convection roasting is awesome.

mine does have a self cleaning function. however, i won't be using that as i hear nothing but horror stories about that feature on any oven. the cleaning isn't bad at all manually. my version has very few bells and whistles which i like. not even a clock or timer. i love it. here's what i got: http://www.yaleappliance.com/Ranges/T...

i love the hood we got, too. http://www.yaleappliance.com/Ventilat...

my thermador is great. all gas convection, though, so not entirely on point. 36 inches. save there, splurge on the vent hood.

Advice for operating without Kitchen (during remodel)

i just got finished with a two month reno. i set up a makeshift kitchen in an office with a fridge, crock, toaster oven, micro, coffee pot, electric kettle, and electric griddle. i had a giant stainless prep table in there, too. most meals were on disposable products and all cleaning and water took place in the bathroom. which always felt gross to me. tap water from sink. dishes in tub. toilet as a garbage disposal if need be. i also made a lot ahead and froze in individual portions.
