Tips from the commercial kitchen for the home kitchen

i mean in the space time continuum, you're not "saving" time. you're right. one could argue it's more time since there's the reheat involved. but i think a lasagna is the perfect make ahead meal. cooking and assembly beforehand "saves" me time the day of the dinner. or really it frees my time to do other things.

i make the thanksgiving gravy days in advance from the dripping of some roasted turkey wings and homemade stock. one less thing i have to do on t'day the better. i make a ton, and warm it in a crock the day of. the last thing i want to do is have to get everything on the table while making gravy from the tom turkey in a roasting pan over two burners.

i make my gravy in advance, and i roast turkey wings for the drippings (plus there's tons of crispy goodness there for noshing a day or two before the big day).

the franks is so strong that it really doesn't' give anything else the opportunity to shine thru. what i do after it's done, is i shred it and return it to the sauce. i add some chopped celery, and i serve on buns with crumbled bleu cheese

the only negative being no crispy chicken skin. i've heard of people referring (not at all negatively) to chicken cooked this way as "chicken pot roast."

you can do this. i'd start with frozen chicken and poach in the broth no more than 4 hours. but that's the only way i'll cook BS chicken in my slow cooker be it in salsa, franks buffalo, or stock.

thanks again. they turned out great (i went for 40 and 15 minutes natural release). quick question, when you say under an hour from start to finish, does that include browning and letting the pressure come down naturally for 15 minutes?

French door refrigerators...

I have a samsung 28 cf french door fridge (which is the same dimensions as the 24-26 CF models believe it or not). and from someone who had the space, i went with fewer bells and whistles. no water dispense, but i did get an ice maker in the freezer. and ours has 3 normal doors. counter depth was only 21 CF. the same size as our old almond color top freezer amana. we went full depth, and although i agonized over it, i'm so glad i went full depth. i couldn't be happier.

I have never eaten at _______ and I never will!

i live in boston proper (within practically walking distance of one). my 5 y/o son loves the OG (as he calls it). I go there more frequently than i care to admit. and if i stick to the soup and salad it is cheaper than panera (i know, i know -- he also loves the mac and cheese there). i have no excuses. i could refuse to take him to these places. t's in a strip mall with a target and an old navy, home depot etc... in my defense we've never been to the applebee's (which he calls the apple store).

he does enjoy more chowish fare and never orders off the childrens menu when we eat out. he kills it at a japanese restaurant, too. do i need to turn in my chow card? in his lunch today is homemade soup with pasta and beans and homemade applesauce. i feel like i need to justify my existence now. i

i scavenger every carcass i come across and make gallons of stock. seriously, people save them for me all over town.

Cooking ground poultry?

genious re grinding own chicken. do you use a mix of white and dark? i have the kitchenaid meat grinder.

newbie needs help from all you sourdough bakers!

you'll be fine. add now or later. as long as your next feed you adjust so it looks like pancake batter you'll be fine. i only used flour (white & rye) and water for my starter. check out the cheeseboard collective cookbook. it's seriously amazing.

pressure cooker short ribs

how long do you cook yours? the recipe times vary wildly from 30-60 minutes. most with natural pressure release. i was thinking 40 would be good.

also, any favorite recipes? I was going to brown, remove, saute aromatics, deglaze with some beer or wine, add the meat back in and enough beef stock to come up halfway and let her go for the right amount of time. remove, defat, serve with polenta, i think.

again, thank you. i've started doing meal replacement shakes in the morning. and (first world problem alert) it takes a bit of time to get the vortex going, and the seeds never disappear from the fruit. i also like to make my salsa in the blender. soups would be a whole new ball game. will look for those links now! what would you recommend for someone with a cuisinart and a stand mixer? i don't need to grind grain, but is grinding spices or coffee an option? i'm not sure i need a ton of bells and whistles. I will wade up thread to see if i can find the answers.
what else do you make in yours? again, sorry to hijack the thread. hope i'm not asking things that have been answered.

What's the best recipe off a supermarket item label you have made recently?

I read an article by Jeffrey Steingarten where he made this recipe, and he said it was indistinguishable from actual apple pie. i still can't wrap my head around it.
