How do you pronounce 'bruschetta'?

I live on the Italian/French border and in Liguria they say "broo-SKEH-tah."

Vegan Lasagna

When I make vegan lasagne, I find that the tofu layer needs a bit of punch so I make a vegetable stock reduction and when it's really thick and intense, I add about 1/4 cup of it to the tofu mixture. I also press the tofu in advance to eliminate as much water as possible so when I add the reduction, the mixture isn't too liquid. The reduction gives the tofu layer the umami that the cheese would have given. The leftovers were divine!
