Homemade goat cheese

I have a question for any cheese makers out there. I was making homemade goat cheese last night and let the whey and curds sit out over night. One website told me to do this. Not sure if this is ok. I also had to reheat the milk a few times because curds were not forming. Are there any health risks that i should be concerned about?

Any Opinions Regarding Smuttynose Baltic Porter?

Tasting notes: dark chocolate, dark coffee, a little bit of black licorice, dark fruits and molasses. There is very little hop bitterness to this one. The malts really come through. I loved it. One of my favorite styles.

Also try the Duck Rabbit Baltic Porter.

Regular Porters are different from Baltic Porters as Baltic Porters use lager yeast.

The Saloon bar and Grill in Jeffersonville

We went here last Friday and were really impressed. Pretty good beer menu with decent drafts and a great bomber selection. I thought the food was really solid as well. I had a burger and my companion had a pizza. They have a brick oven in which they cook the pizza which I thought was pretty cool. They also have rooftop seating which I guess they will be opening in the upcoming months. I think that alone is great.

Best Bottle for EXTENDED cellaring

I'd go with Rogue Old Crustacean. It's meant to be cellared and even the brewmaster recommends cellaring as it gets better with age.

Founders Backwoods Bastard is great even though it's a Scotch ale and not a Scottish ale. I also loved the Black Biscuit, Rye Whiskey Porter, Maple Mountain Brown and Canadian Breakfast Stout. Founders is a great brewery. I agree with Shaggy, they really don't make a bad beer.

I was at DFH brewpub over the summer and enjoyed it. Had the Johnny Cask (75 min IPA). If you like Yards you need to try the Old Bartholomew Barleywine.

Foothills is releasing the Sexual Chocolate in bottles on Saturday, Feb 6th....which is the same weekend that I'm driving down. Unfortunately, I'm driving down Friday and back Sunday. The bottles with probably sell out in 2 hours on Saturday.
