Help! KitchenAid mixer: the hook hits the bowl

Hi, It sounds like the beater-bowl clearance needs adjustment. I have a 5 qt bowl lift mixer, and the adjustment screw is on the back, visible when the bowl is lowered. Turn it counter-clockwise by quarter-turns to raise the beater. It may have shifted during shipping.

For more traditional Southern/Soul, Thelma's Kitchen/Rib Shack on Auburn Ave is one of the best cafeteria/meat n 2. Ribs are smoky/sweet, and the fried chicken is light and crispy. Sides are seasoned well, not too salty or greasy. Lunch is the best time to go-late afternoon the food sells out or dries out. The building looks shabby-it's a nod to the building's earlier occupant and landmark, The Auburn Ave. Rib Shack. It's close to downtown which is a plus, Atlanta traffic is legendary.

Good burrito in Roswell?

Mr. Taco in Roswell and Alpharetta has authentic Mexican fare. In Sandy Springs there is a lunch counter in the Tres Hermanos grocery store. Both of these are popular with my Mexican friends and the food is not only fresh and delicious, but very reasonable.

Georgia - Fargo to Donalsonville

The Pond House steak house near Bainbridge. It's in a house on a dirt road, everything on the menu is good, but the smoked pork chops are a must. IMO the best restaurant in the area.
The Georgia Olive Farm is south of Valdosta-olives are a new crop in N. FLA / S. GA. Their olive oil is surprisingly good. We did a comparison of GA Farms, Greek, and Chilean olive oils and GA Farms won. They don't have a restaurant, but their oil and a fresh baguette make a meal.

Before snowstorm, I must have ________

White goods = milk, bread, diapers. Stocking up is mandatory for any possibility of snow in Atlanta. The stores were even wiped out for Hurricane Sandy & we weren't even in the path of the storm-it was hysterical. For some reason it's popular to wear cargo shorts for these trips to the store, like a fear the weather will never warm up.

I use a 2qt DO almost every day-it's good for rice, oatmeal, beans, bread pudding, and baked grits. I haven't tried it yet, but It would probably make a nice small loaf of NYT DO bread.

Warranty Experience With Cuisinart, Calphalon or All-Clad

I bought most of my cookware in the 80’s, and 25 years later it was showing its age. Le Creuset and Calphalon honored their lifetime warranties. I had a set of Calphalon anodized. The interior finish was destroyed-pitted bare aluminum (my other half likes to stir with metal forks). The customer service rep told me they would consider any damage other than loss of finish from a dishwasher. Sent my pans in and a couple of weeks later they sent me a new set from a comparable line. A friend had a broken teapot which was discontinued; they allowed her to choose a pan from their current line-she got a sauté pan.
I called customer service at Le Creuset about my baking pan. One of the wire-type handles was missing and the interior was scratched. The person on the phone asked me questions about the age and condition of the pan & where and when it was purchased. They gave me a service/ticket number, I sent them the pan, and a few weeks later they sent me a new comparable model. In my situation, both companies were fair and easy to work with.

How to Use a Cast Iron Panini Press

I use a cast iron skillet as a panini press. Preheat on high for a few minutes, butter the top of the sandwich and press with some pressure. If anyone has found a use for the grill press besides sandwiches and bacon, please share.

Driving down east coast

For pretty places, I recommend a side trip through Beaufort, SC to Hunting Island State Park (about 1 hr from Yemassee on I-95) The park and surrounding area are beautiful lowcountry with marsh views, shrimp boats, and palmettos. There are nice restaurants in Beaufort, and in St Helena on the Sea Island Parkway, there is Gullah Grub, a rustic spot that serves fresh lowcountry-style soul food like she-crab soup, shrimp, and ribs with traditional Southern sides and desserts- a good spot to sample local seafood Gullah style.

How much do you spend on groceries each month?

We're a family of 3-including a teenage boy-and spend $300/month at the grocery store. We rarely dine out, but cook a lot and eat well. It takes some planning-knowing when stores mark down meat, etc., and some time-we throw very little away-the bones from last night's chicken thighs will go for broth, and the skin will be rendered for fat (yummy). That being said, I think the main reason we get by on $300/month is that we live in the South where groceries are reasonable-whenever we travel, I'm always surprised at the higher food prices.

Good "beginner" cookware set and knives?

Chicago cutlery knives are a great value. Incredibly cheap, but surprisingly good. They are a good choice for beginners, rentals, etc. I have more expensive knives, but I love the way these feel.

Why Cast Iron? Another reason .....

Love it. Seasoning cast iron is like BBQ in the South-everyone has their own version & they swear it is the best. Before you go shopping, try to breathe new life into your cast iron: heat the pan on the stove until it just starts to smoke, cover the bottom of the pan with coarse salt, turn off heat. Add a few tablespoons of oil, using a few paper towels or a cloth(pan is HOT), scrub the inside of the pan hard for 3-5 minutes, wipe clean. Wipe on a thin film of oil. This should make your cast iron non-stick. It is a true joy to watch eggs slide around in a cast iron pan.

What to do with goat's milk?

You can make a soft goat cheese by heating the milk to 175 f. (80 c), remove from heat, stir in
1/2 C lemon juice per qt of milk, let sit for 2-3 hrs-at this point, the whey should be rising to the top. Strain through a colander lined with cheesecloth: 1-2 hrs for a ricotta texture, overnight for a firmer cheese. This works with ultra-pasteurized too.

Replacement Blade for Apple Parer

Hi,
I have an antique cast-iron White Mountain apple parer that cores, peels and slices. The blade that slices the apple broke-it is an open, curved shape, not the circular loop many of the new slicers have. I'm hoping someone at Chowhound has a source for parts for Goodell apple parers. Goodell made these from the late 1800's until the 1970's. This is a picture of a similar one, any information would be helpful.

Think Inside the Dishwasher -- new stuff to wash

When I worked in restaurants I used to wash my shirts in the dishwasher then hang dry. I lived alone & ate at work, so there were never dirty dishes. Put smaller clothing on the top rack of empty dishwasher & turn off the heat/dry, use regular detergent.

Le Creuset has a lifetime warranty and great customer service. Call them for information. Especially since your DOs are older, you should be able to get replacements. Sticking should not be an issue with enamel CI.

I agree -French Press is best - especially for 1 or 2 cups. I've been experimenting with
re-roasting store-brand whole-bean coffee on the stove. It takes less time than roasting green coffee & improves the flavor- especially if you like dark roast.
If you drink more coffee & like a timed brew, Capresso makes nice machines & can be found for $100-150.

Whenever we have luncheons at work there is a fight for the rotisserie chicken carcass. It makes great chicken broth. I also render lard from pork trimmings.

Your fear is not unfounded. Vibrio is found in the warmer waters in the Gulf of Mexico. Best to make sure raw seafood comes from the Northeast or Northwest where the water is too cool for this nasty, nasty bac.
