Easy Chicken and Chive-Dumpling Soup

A year later I just saw your question, so I am a bit behind lol. I just made this soup again to get me through my traditional Dec/Jan cold.

Vadouvan is a curry that whilst originating in India, has a French culinary influence, e.g. it contains shallots. It is a little milder in that it's not a hot, spicy curry, but it still has a great complex flavor.

I love the stuff and use it frequently. It is much more flexible than a traditional, yellow curry. You can find it on a lot of specialty spice websites. Give it a try. Hope you like it.

Chilaquiles Breakfast Casserole

Loved it. Incredibly easy. We ended up cooking the dish for another 12 minutes, as we prefer a more firm texture to the casserole, rather than a soft, custard-like feel. The heat in this is perfect. Tolerable for those who prefer it not too hot, but easily augmented by a touch of hot sauce for those who like the fire.

I topped the casserole with avocados drizzled with lime juice, salt, queso blanco and crema.

When I make this next, and I will definitely make it again, I will add additional onion and garlic to the sauce.

This would also be great with caramelized onions incorporated into the custard.

Kouign-amann in the DC area?

Unfortunately they don't carry them in the stores. They are only the WS website. They are made by Galaxy (I believe) and shipped directly from Galaxy. :)

Williams Sonoma sells frozen, make-at-home kouign amann and kouignettes that are really quite good. And...there is nothing better than wandering downstairs in your PJs and easily warming up a batch. All of their frozen pastries are amazing. Really authentic.

Local source for Benton Bacon or pork belly?

Not sure about Benton bacon, but if you are looking for any part of the pig, go to or call Three Little Pigs Charcuterie and Salumi in DC. They are phenomenal. Everything we have tried from them is of spectacular quality and taste.

I recommend you call first. Chances are if they don't have it in stock at the moment, they can acquire it for you. They can find you all things pig.

They have a very close relationship with all of their source farms and it shows.

Tip: When you go to visit them, go during the hours they serve lunch. It's always good.

Heinz Baked Beans (UK recipe)

I have seen them at Wegman's in MD. You might assume that they will be more expensive at a regular store v. a commissary, but I have found that with imported food, it can go either way.

Cheesy Artichoke Dip

Sooooo fantastic! Loved this. Really easy, too. I tweaked as follows: I used 1/2 plain and 1/2 marinated artichoke hearts, I used garlic croutons sent through the food processor instead of panko and lastly, I added 1/8 cup vermouth at the final stage before I transferred it to the baking dish to cook.

We served this on sliced baguettes that we brushed with olive oil and sprinkled with sea salt, then put under the broiler for a bit.

So good, so recommended.....try it!

Easy Chicken and Chive-Dumpling Soup

Really good. Rather quick and easy, as well. My changes: I used smoked ground pepper, added 4 chopped scallions and 2 tsp vadouvan curry to the broth.

For the dumplings, I took your advice and halved the salt. Additionally, I added about a tbs of chopped fresh dill. They were perfect.

This is a great RX for a cold or a snowy day. Recommended.

Cheesy Baked Rice

Pretty good. Really easy and quick prep. The rice cooked for 30 min, then 15 more uncovered with the cheese topping and it was perfect. Tender rice with a slightly creamy consistency.

I will definitely make this again, however, I feel it would benefit from additional flavor elements. Perhaps increasing the ingredients called for or adding additional elements like parmesan and chives.

A great accompaniment. I recommend.

Pumpkin Bread

Really good. Nice top crust. Moist, but not gooey crumb. Great flavor. I was generous with the spices and didn't regret it.

I used 2 large eggs. The bread was done at 60 minutes.

This outshines my current pumpkin bread recipe and has earned the title of my new favourite.

Chicken Chile Verde

This was pretty good. I imagine it will be terrific tomorrow after all of the flavours intensify. I did make a few tweaks to deepen the flavours a bit. I deglazed the pan (before I put the onions in) with the slightest amount of red wine. I also added an additional 1TBS cumin, some harissa (dried),some lime juice and green tabasco. The recipe did require, to my tastes, a good amount of salt at the end. Good winter comfort food. I would make again.

Beef Braised in Guinness

Really good and really easy. I did make a few changes. I added 1 scallion, 2 cloves of garlic, and used Seasonello seasoning in place of salt.

For my bouquet garni, I used fresh thyme, fresh sage and rosemary. I used 2 dried bay leaves.

We used fingerling potatoes that we boiled in Guinness and beef broth with a bit of herbes d'provence and a clove of garlic.

Next time, I think I will nix the potatoes and replace them with quartered, stem-on mushrooms.

We served this over egg noodles and it was great with them. I recommend.

Chicken Satay with Spicy Peanut Sauce

Loved it! The sauce on its own is great. That said, it easily lends itself to adjustments. We added a touch more peanut butter, curry and a bit of chili garlic sauce to account for personal preference. I think next time I might add some chopped up peanuts.

The marinade is pretty good, but I would have preferred a more pronounced curry flavor. I was only able to marinate the chicken for 3 hours though. Next time I will make sure to increase the marinating time and add a touch more curry.

Really good. I recommend this.

Grilled Pork Chops with Fresh Plum Sauce

Made this tonight. Very easy and quick to make. Pretty good, but not spectacular. The recipe definitely has a fruity, tart taste, as written. Due to personal preference I would probably add a touch more garlic and scallion to make it a bit more savory.

I think next time I might experiment with adding some liquor or wine or balsamic to give some depth.

If you want to make this richer, it would probably be good with a hit of unsalted butter, right before it goes into the blender.

Rhubarb-Braised Chicken Thighs

Made as directed with the exception of thickening the sauce at the end. We really liked it and will make again. The elements of the ginger, cardamom and rhubarb really come through and make this dish shine.

Braising and grilling get my vote. My favourite thigh variations are piri-piri (or peri-peri) marinade and Peruvian-style marinade, both on the grill. Amazing!

Pama Liqueur?

I think it tastes fantastic. I put it in one of the easiest and most delicious mixed drinks in my repetoire. I call it a Sweet Tart. Rocks glass with ice, shot of Pama and the rest is Orangina. If you aren't familiar with it, Orangina is a dry orange soda with a bit of pulp. Not at all like the day-glow, sugary american varities of orange soda's. Orangina is ubiquitous in Europe, but can be found at the occasional Safeway or Trader Joes (from my experience) in the states.

I have been searching for a liqueur called Parfait Amour (also sometimes called Pafait d'Amour) in the Baltimore and Annapolis, MD area for ages to no avail. It is purple in colour and is a curacao-based liquer. Anyone seen this liqueur in MD or DC? Ideas?
