Mediterranean Lamb Burger

oh my goodness....this recipe is amazing. The lamb is seasoned to perfection, and the toppings compliment it perfectly.I was fortunate to have all the ingredients on hand-and had no idea what to do with my ground lamb. Will definitely make this again.

help - need meatless meal ideas

How about a frittata? Or a spanish tortilla? These are egg-based, and both are flavorful, and could include many different vegetables. potatoes, etc....Also economical and very, very tasty! Assorted Quiches with a nice salad could also work!

help - need meatless meal ideas

My all-time favorite meatless dish is spanikopita. A delicious Greek layered dish with phyllo dough, and a savory, herby, creamy, spinach mixture. Much of the main flavors come from scallions, dill and feta. It is so delicious and satisfying.Let me know if you'd like my recipe! I'm not a vegetarian, and I could eat this every night of the week!

Spiced Pumpkin-Oatmeal Cookies

delicious! but.....I used fresh pumpkin puree from my organic garden-fresh pumpkins, not canned, and it made my mixture a bit liquidy. Adding a significantly larger amount of flour seemed to resolve this, and they were still sweet n flavorful!

Whoever said to put Bell's poultry seasoning in cretons is way off base. I am French-Canadian, and my grandmothers, aunts, mother all used the same flavor profile, which include clove, cinnamon, allspice-with, of course, plenty of onion. poultry seasoning is not even close to the flavor of cretons. For those of you out there who want the authentic, please scroll down below for an authentic recipe, you wont regret it, I promise.

Got a 3- crock slow cooker for Christmas, I love it- but I need some ideas!!!

Hey guys! I would like some ideas, 3 items, that I would make simultaneously, that would cook well in a slow cooker/ crock pot. Each crock has its own separate thermostat, so you can cook things at different temps.I just cant seem to think of 3 things I'd cook at the same time, for the same meal, that cook in crocks....I know you guys can help me think of ideas!! For example, if I made pork carnitas in one of the crocks- what would/could I make in the of the crocks? same goes if I were to make a stew, what would I use the other crocks for? I would imagine they would all have to be "wet" items-soups, stews, braises, sauces...I'm sure there are some creative folks out there! Thanks in advance!!

I grew up on cretons, both my parents are French-Canadian, You are better off making it than buying it. super easy, and much better tasting. My ingredients include lard, because todays pork is way too lean for cretons- the fat is what makes it so tasty, and gives it the creamy texture! Don't omit it-you will end up with a dry crumbly product! fat acts as the "glue" to make it an adhesive spread.

1lb ground pork
1/2 cup of lard (pork fat)
1 cup milk
1 medium onion diced
1 small clove garlic grated
1/2 tsp clove
1/2 tsp allspice
1/2 tsp cinnamon
1 1/2 tsp salt
1/4 tsp black pepper
1/4 cup homemade bread crumbs
put all ingredients into pot EXCEPT the bread crumb.cook over medium heat for about one hour, add bread crumbs, cook for a few minutes more, place in containers and refrigerate.

How do you prepare small amounts of mayonnaise?

what great ideas! both of them are super helpful! Thanks! :)

New World Home Cooking, Woodstock, NY

HUGE disappointment. I am a cook myself,-I believe I have an excellent palate, and the food was terribly mediocre. most of the food was under-seasoned. There was supposed to be a chimichurri sauce for the sirloin, and instead it was served atop a pool of bland tomatillo salsa verde-NOT a chimichurri sauce! I have many more complaints about the meal-but wont bore you- the meal was boring, with no exciting interesting flavors. It felt like a chore to eat my meal- and food should never feel that way....

Maple Syrup bargain!!!!

For all those maple syrup lovers- who cringe at the prices.....I have found an exceptional bargain at Ocean State Job lot. One 32 oz jug of VT or Canadian Pure Grade A dark Amber maple syrup for $12.50!!!! Its less than 1/2 price of what you'd normally pay in the supermarket!

Good Mexican in Hudson Valley

this sounds absolutely delicious, thanks for the review- gonna give it a try! (I love barbacoas)

New Paltz Restaurants

lemongrass was terrible for me....careless food preparation, not tasty, and overall unpleasant.

Has anyone tried Mexicali Blue in new paltz ny?

Guacamole-tasty, but not extraordinary
catfish taco-owners recommendation, left me very disappointed. fish was unseasoned, and the soft blue corn tortillas were very bland, and not a pleasant texture.was not composed neatly, sour cream was on outside of my taco shell, making it very difficult to eat.
steak taco-meat was not seasoned at all-same complaint about the taco shell.
shrimp taco-the only item that was well-seasoned. the shrimp were in a garlic marinade, and well seasoned.I don't really understand the raspberry aioli though....
The "homemade" hot sauces, are, come to find-"Franks Red hot sauce, that they doctor up, with lime, garlic, or other ingredients.
VERY overpriced. $5.00 for a taco???, the fillings were meager, and not worthy of their steep prices...

Non-tomato pasta sauce recipes?

I disagree about the Ricotta not making a good sauce. It can be delicious with crumbled italian sausage, and caramelized onions. Also tossed with peas and prosciutto. I will be making a mushroom pasta sauce tonight (I found dried mushrooms for $2.50/pkg!) I will rehydrate mushrooms in hot water. Cook up some bacon, or pancetta in olive oil, add chopped shallots and garlic. cook until transluscent. add chopped rehydrated mushrooms. Add mushroom liquid, stock or white wine to deglaze. add fresh herbs (thyme, basil, sage, parsley) add heavy cream and halved grape tomatoes (i have a billion in my garden right now) serve with parmigiano reggiano Buono appetito!!!

Blueberry Picking

I think blueberry park in dutchess county is now closed- it appears these posts are pretty old- I remember blueberry park- I went there years ago. It was great- reasonable prices- and they gave everyone an awesome blueberry muffin recipe. They were very nice folks!

downtown quesadillas [Wappingers]

Hey, thanks for the info on "the ground hog-I think I am going to stop by the quesadilla place today- to check it out- It does not stick out at all- My friend from out of town was in the car with me, was the one who spotted it- I never would have noticed it. The "falls diner" also looks really cool (I love the old brick buildings) I'll have to try it sometime.

downtown quesadillas [Wappingers]

The other day I was driving through Wappingers, and I saw a a place called "downtown quesadillas" Has anyone tried it? If so, how was it? I had never noticed it before and just was curious. I am also curious about the "groundhog", and the "falls diner", also along the same street. Any info would be appreciated...

Diners, Drive Ins and Dives

This show gives me the munchies!!! I dream about some of the food on his show....I typically would get turned off by people who throw out "cool" lingo just to appear cool, but in Guy's case, for whatever reason, it just doesn't annoy me. I am so excited by the food on the show, that Guy himself, is really just an afterthought. I think his enthusiasm for the food is great, and quite contagious. I think he describes the flavors of the food well, and he seems to have a good palate overall. I think this show is well produced, and extremely addicting... I get excited when I hear the theme song...This show is a food addict's dream come true...

Lime Pound Cake

This was ok- The glaze had no consistency, being that it is made with granulated sugar, and lime juice, and the crystals don't dissolve without heat, and thus it is thin and runny-not adhering to the cake or giving any kind of discernable glaze to the cake. I added some confectioners sugar to that mixture, as well as a generous amount of lime zest. (the zest has much more flavor than the juice)
Also, I would NOT recommend upper third of the oven for baking. The top browns too much. upper-middle is sufficient.
Maybe I was just spoiled by this delicious sweet lemon cake my mom used to make when I was a kid. It was sweet, moist and very lemony (not a pound cake) I used motherbucker's suggestion to perforate the cake with a dowel and let the glaze ooze into it. My mom did the same with her lemon cake. Overall not an impressive cake, I expected much more flavor.

Your favorite canned vegetable and how do you eat it?

I am definitely not a big fan of canned veggies, but you can't deny their convenience...My mom used to make these asparagus roll-ups with canned asparagus. lay out a thin slice of ham, spread it with garlic flavored cream cheese place a spear of asparagus on one end, and roll it up jelly-roll fashion. cut into cute smaller pieces, makes a delicious and easy hors d'oeuvres, interestingly enough, it isn't 1/2 as good with fresh asparagus. the canned asparagus is tender, and much less fibrous, which makes for a better end result.

What do you serve with meatloaf?

Mashed potatoes are standard-but a more nutritious, (and delicious) alternative would be cauliflower mashed "potatoes" -the texture and appearance will make it so you don't miss the 'taters- but richer flavor, and higher nutrition will make you feel better about your comforting meal.

cook your cauliflower florets in chicken stock until tender, mash them as you would potatoes, adding butter, and whatever you would normally add to your mash...trust me- it is delicious!

Oaxacan in Poughkeepsie? Looking in Dutchess or Columbia Cty

I agree with Radioactivebetty! Tacocina, is as authentic Mexican as you can get! Everything is made fresh, and they have all kinds of different meat fillings for their "tacos"-Not like any taco I have ever had, but very fresh and delicious. They even have tripe, beef tongue, and beef head for taco fillings!
