Your comment reminded me of another pet peeve...related to yours.I hate when Emeril used to get cheers for throwing extra garlic in things-or extra anything for that matter.but garlic seemed to consistently elicit the cheers from the crowd-as if it were some sort of sporting event. give me a break!!

My god, this is ridiculous! I work in a psychiatric hospital-and according to what many of the commenters have said-I should be expecting or receiving tips for my services! In addition to running therapy groups, I make beds, hand out linens, serve meals, shower people, dole out toiletries,have 1:1 contacts, take people on walks,toilet patients, offer coping skills, play cards/games with patients, play guitar/sing for patients-the list goes on. I get paid crap! We get no bonuses, we work grueling 13 hour shifts, and we are often in dangerous situations-where we are injured, spit at etc....please don'ttell me that the staff putting a take-out order together deserves a tip, please. don't.

I would say there are no decent canned versions of stock., however the ones sold in cardboard boxes-some of them are good. You dont need carcass to make stock,You can use any raw chicken with bones-that actually makes the most beautiful stock.there really is so little prep work involved-you dont even have to peel the onion.It's one of the easiest things to make. If you make a large batch, you can fill many containers and freeze them for when you need them.You will not believe te difference in flavor

This is almost exactly like our recipe-I would make the following modifications. I would use twice as many onions. omit the garlic-we never use it.-as for the dough recipe-it translated incorrectly to vegetable oil, please use either lard-or crisco for the dough.do not use oil.season with plenty of salt and pepper.I use at least 2 tbsp, as there is a lot of meat and potatoes to season. Bon Appetit.

Hi Jo!
Cipate-pronounced "see-pout"-was traditionally made with wild game-I think it was from Lac St Jean? region. Our more modern version contains cubed potatoes, many chopped onions and various cubed meats-cheicken ,beef, pork, and veal.It is seasoned with cinnamon and clove-then there is the "pate", a savory bread type crust that goes over top-it is made in huge quantities and usually feeds an army.It is usually made in those large speckleware roasting pans-and the crust gets a beautiful rich brown color. It is hearty and delicious.

Jo,you are very welcome, enjoy it! My Mother has passed too, and I am passionate about keeping these recipes alive. Please let me know if you want any other recipes-or maybe you have some traditional recipes you wouild like to share. I make cretons,cipate,tourtiere,pouding chomeur (dessert) galettes a la confiture (cookies) and bons bons aux patates (candy)I'm sure there are others, but those are the main ones I make.I love making these meals-as their aromas conjure feelings of nostalgia, and hominess.
