Chiles Rellenos

I had never seen Chile Relleno done this way before. In New Mexico, we use our locally grown chile from Hatch or Chimayo. The Chimayo variety is usually too small to make a good relleno, but sometimes you get lucky.
I learned from your instructions how to test when the oil is hot enough. I never knew you could use the handle of a wooden kitchen tool.
Looks like a great recipe and will be trying soon. Thanks
