Thank you all for your suggestions! Since I had planned Jambalaya for dinner last night, I used a slab of ham and Louisiana hot links. It turned out great, but NEXT time I would like to make it more authentic and use Tasso and Andouille. I certainly have enough leads to do some hunting and will repost if and when I find these ingredients! |

My recipe for Jambalaya calls for Tasso & Andouille Sausage. My local Luckys butcher "never heard of Andouille" so I dare not even ask about Tasso. Has anyone been able to find it in the Bay Area or must I order online? |
