Agreed, well said. Keep in my mind that it was Jen that put out the Ad for a Chef with a particular type of food in mind already. But of course a Chef brings it alive.

Black Hoof was Jen's brainchild. There are very few CHEF owned and OPERATED restaurants that succeed. There's a reason for that...Chef's are chef's...artists. Not necessarily business people.

A strong front of house is always needed...her philosophy, her vision etc. Black Hoof would not be what it is without her, but it will continue to be what it is without him. Yes he's you know how many kitchens have their sous chef running the show...

Yes, Jen can be cranky and customers can be very trying. And don't even get me going about the how the average patron has wrecked the whole reservation process for other diners by their gross inconsiderateness. Small businessess need to protect their business.
