Almond milk: where/how does it work for you?

Anything that contains coconut and/or chocolate tastes great with almond milk. If you want to imcreaee the fat content to use it as a replacement for milk, add coconut oil to the milk

No/Low Carb Meals

I go through periods of low carb cooking, myself. Sometimes I want to drop a few lbs, and a high protein diet helps you retain lean muscle mass.

Here are a few of my favorites:

Corned beef boiled dinner, with green cabbage, carrots & green beans. At this time of the year you can substitute fresh brussel sprouts for cabbage. Serve with a good stone ground mustard.

Korean tofu stew (Jigae) with beef, tofu and any variety of veggies like zucchini. Or Kimchee soup, with tofu. The garlic, ginger, red pepper, kimchee, tofu etc, make this a very anti-inflammatory, antioxidant rich, nutirent dense diet food.

Substantiial salads, like steak salad: thinly sliced seared chilled steak over a salad of spinach, shredded brussel sprouts, shredded raw squash, shredded carrot, with wine vinaigrette spiked with some Penzey's peppercorn dressing powder. Also salade Niçoise and antipasto salad with preserved meats, marinated artichoke hearts, olives, sundried tomatoes.

All of the low carb main dish salads I like to make use very substatial greens, like spinach, arugula, shredded brussel sprouts and other shredded things (carrots, raw squash, etc) in place of lettuce.

I didn't miss your point at all.  You stated that much of Carla's success, at least on TV, is due to her personality.  You didn't qualify your statements by saying Carla has a good personality for television specifically.  And with Beverly, you say that she has little in the way of a compelling personality [at all].

When you put two opinions in parallel like that, and you add a qualifier to one and omit it from the other, the parallelism suggests meaning where such differences exist.

Since you didn't qualify your comment about Beverly's lack of compelling personality, the implication, by contrast with your qualifying your statement about Carla re:TV, is that it is Beverly is an unqualified personality-deficient woman (in any context, TV or not-TV)

Besides, your post was clearly as a viewer/consumer since you were talking about your personal reaction to the women in shows.  There's no other context, like "speaking as someone with television personality casting experience..", and the post you were responding to was also personal opinion.  So implying it was an objective, and not personal, opinion seems even more far-fetched.

BTW, I think what also makes for interesting reality TV is when people misread other people's surfaces and misjudge their talent based on a lack of a talking game, which, in my opinion, people might be doing now with Beverly.

See, your whole point is based on the premise that "so many other chefs want nothing to do with working with Beverly".  That's your observation, which seems way off base to me, and a product of your imagination.

To another person watching the same show, what they might see is that a couple of insecure, manipulative female chefs have been singling Beverly out as a scapegoat by heaping unfair accusations that aren't true on her in a couple of team challenges, to set her up for elimination if they go to the judges table on the bottom.  Meanwhile, she is outperforming them, even under the barrage of insults.

Your read of events isn't very accurate, and seems to be more of a projection of your own imagination.  Just as you take a look at the discussion here and just imagine people are viciously attacking female chefs because they are female.  Well, if you stop projecting and watch the show, you will see that it was female chefs who were acting badly on the show, and that is what is being commented on.  It wasn't a neutral show, with male and female chefs acting the same, and people are rushing in to pick apart the females.

I haven't seen any mysogyny on this webite, and I'm really appreciative of that.  You should watch the show more carefully before wading in and accusing people of making prejudiced posts, based on your inaccurate and sketchy take on one episode of reality TV.

I wouldn't call verbal abuse, false accusations and manipulation not taking crap and trying to get the job done.  If the Prom Queen had shouted "f@ing retard" at me while I was in the middle of service cooking all the restaurants winning entrees, I would have halted service and walked off the show for that.

As far as I can tell, Beverly is a bigger person than I am, and she was the one trying to get the job done and win the challenge for her team.

Yeah, I'd love to know more about Beverly's rep as well. I'm more curious about her future career than I was before the episode.

Paula Deen's may have "type 2" (aka lifestyle) diabetes - surprise, surprise, surprise!

Yeah, the butter-slingers in French cuisine are sometimes pushing an envelope, too, exploiting tricks to create addicting dishes.  Certain combinations of fat, sugar and salt trigger the brain to release oxytocin, an addicting brain chemical.   Other combinations stimulate the brain to release serotonin, an anti-depressant.  The Paula Deens of the world, and her counterparts in rich, heavy French cooking, are getting a lot if their mileage from pushing the brain's food addiction buttons.

To me, the heavy preparations of classic French cuisine that were codified by Careme & Escoffier are interesting, and cool to know, but I'm way more interested in what Laura Calder teaches, which is how to cook for yourself and friends, and in the regional, seasonal and specialty cuisines of France.

I recently ordered a couple of "Cuisine Minceur" books. These are from a movement in haute cuisine in the latter half of the 20th century to lighten up the food. I haven't cracked them open yet, but supposedly they still use butter, etc, but not as a crutch.

Great! I would recommend adding smoked meat b/c the bratwurst was a little too mild to make the Bauernschmaus all that it could be. What I did was a meals-in-Minutes version. It's also better with white wime or beer, but I had neither on hand. I like to base it off Jacques Pépin's Choucroute Garni, when I have the time.

I noticed there are quite a few posts where people have trouble sorting trash cooking from creative repurposing of prepared foods. Let me help.

My female in-laws, who make Paula Deen look like a health nut, haven't evolved to the level of Velveeta and multigrain noodles yet. Their dishes are composed with such delights as Cheez Whiz and Uncle Ben's Converted Rice. They also count white potatoes and iceburg lettuce as vegetable servings. To them the OP's recipe WOULD definitely be a health food.

Needless to say, they all look older than their husbands and suffer from chronic inflammation disorders of one kind or another.

Here's something you can try. Just ask him to cut the ribs, what, 3 inches thick, instead of flanken style, and not to separate the individual ribs. Then you lay them out flattened with a weight on top and partially freeze. Then slice thinly.

Help me get over my fear of kimchee!

Get a really hot, hot guy you've been lusting after. Go do something adventurous with him, like rock climbing. Afterward, take him to your apartment and grill the beef strips you had marinatingin your refrigerator, and set out steamed pearl rice, lettuce leaves and a bowl of kimchee. Eat only some of it.

Have sex all night. You feed each other grilled beef and rice lettuce wraps with kimchee when you are hungry in between bouts of lovemaking.

You will be addicted to kimchee in no time.

Or, you can just pretend there's a guy and that you went rock climbing, and eat the lettuce wraps alone. That should work, too.

I like Charcoal Kebab, too, if you're referring to the Afghani place that's in same K-Mart shopping center as Indo-Pak spices and Medina Market.

I had a delightful Thai green curry in the little Thai place catty corner to the building Charcoal Kebab is in. The flavors were well balanced, it had just the right fresh Holy basil fragrance, it was great. I can't remember the name, but I've been meaning to go back & see if they can do that consistently.

Instant Ramen/Noodle Bowl eaters, what's your fave mix-in's?

I love tofu in spicy ramen, it works really well

Also,

eggs (already boiled or poached in the ramen)
Seaweed
Green onion sluces
Fish cake, shrimp, or chunks of cod
Cooked meat, like leftover roast, diced or cut into matchscticks
Just about any veggie can be lightly poached in the ramen

You can also park and walk around Bethesda sometime. Bethesda is wall to wall doctors from the Naval Hospital, NIH, etc, and they have a nice little food & art gallery district to match. A lot of little European, Latin, Indian & Asian restaurants within walking distance of each other. For American food, there is a microbrewery, Morton's, McCormick & Schmick, Black's & Houston's.

Trader Joe's Yea/Nay Thread - 1st quarter 2012 [old]

Nurmberger (Bavarian) Bratwurst, precooked in 8 oz packages for $2.99, imported from Germany

It's actually authentic tasting Bratwurst, finely textured with the flavors of marjoram, mace, coriander, etc. I made a quick Bauernschmaus with sausages, sauerkraut, sweet onuon, an old apple, chicken broth & caraway seeds. It was a nice surprise. It's hard to get bratwurst that tastes like real German Bratwurst over here. I'm thinking of picking up a few extra packs and freezing them before the season is over and they disappear.

Need some practical pragmatic input on a rice cooker! [moved from Home Cooking]

I have the zojirushi induction fuzzy logic rice cooker. It's nice. I don't use the keep warm feature as the rice gets overcooked, so maybe I'm not using exact right proportions of water for each of the different varieties of rice I cook. I wish I'd gotten the pressure cooker one with the GABA brown rice feature, but there are workarounds for germinating and cooking brown rice.

You hit it right on the head, it's not entertaining. It makes me feel uncomfortable to tune into a creative food show and see that ugly stuff. To me, creative foodcraft is joyful and sexy. What's weird is tuning into a food show and seeing degrading behavior directed at someone. It's unappetizing.

Cooking for 2 on a budget?

Using seasonal veggies and buying the meat on sale can be an additional money saving step for curries.

In winter I make a lot of seasonal-veggie curries based on whatever meat is on sale. Last night we had lamb shoulder Indian curry with pumpkin & sweet onion. I also have been known to make goat curries, chicken curries. It's such a versatile dish. The curry veggies can be sweet potatoes, squash, peas, tomatoes, greens...
