CIBO, Red Bank

I was all excited about trying this restaurant because I am a lover of brick/coal oven pizza. Not many to be found in the area so I was hoping for a new place to go to.

Walking in, I was impressed with the decor and ambiance and it smelled amazing. We ordered the 4 seasons...fresh mozzarella, sauce, artichoke, olives, mushrooms, oven roasted tomatoes. My sister asked to have eggplant added on as well.

The sauce was mediocre at best, the mushrooms were completely raw, artichokes and eggplant were very vinegary, tomatoes were not oven roasted...they were just sliced tomatoes placed on the pizza and olives were plain black pitted olives right out of a can. I was SO disappointed. I'm 1st generation Italian who has traveled to Italy plenty of times and have family members who make better pizza at home. One thing I did think was very good was the crust, it was thin crispy and very tasty but that's about all I can say.

I've actually had better pies at Bertucci's in Holmdel..who would have ever thought!
