Sharpening Steel

Have you tried They have great deals on knives and if you are going to have the knife for a long time, money should be no object. I have used alot of knives in my career as a chef and the Global 8" by far is one of the best I have used in a long time. This again is a personal thing and you should hold the knife before actually purchasing this item.

looking for great apps.

I am looking to go out for some great apps, does anyone know of a great appetizer place in and around Providence RI?

Bourdain vs. Deen

Well put, I could not agree more. Some times I feel that these shows are really missing the whole point of why someone becomes a cook or chef in the first place. With all of the competion in the desert or on some tropical island with that feel of a Survivor rather than just teaching something the average person could get from their experiences as a chef. At least Anthony Bourdaine shows us what the folks in different parts of the world consider food. I have read all of his books and can totally relate with his kitchen experiences having had alot of them myself in my career.

Help Purchasing Ceramic Knives

I had one of these knives and I do preface the fact that I HAD one of these. It lasted about a month until it slipped off of the cutting board as I was prepping an item and broke right at the shank. I now have replaced this knife with what has got to be one of the best purchases of a lifetime as far as knives go. The Global 8" knife is by far hands down my favorite knife. Skip the trend and invest in something that will last a lifetime.

Sharpening Steel

One thing you must remember about a ceramic item whether it be a knife or a steel is that ceramic is great until you drop it on the floor and you watch as your wonderful steel, or in my case knife shatters into a gazzillion pieces. I would stick with the tried and true steel rod. Just my opnion.

Best Seafood Dishes in RI?

By far one of my favorite seafood indulgencies is the Lobster Rueben at the Brick Alley Pub in Newport RI. Everything a regular Reuben has, but replace the Corned beef with Lobster, awesome. The second place would have to be Retrovo's in East Greenwich/ Warwick RI, they do a Lobster Rissoto that will blow your mind. The third seafood dish I have to recommend would have to be Spain they make a killer seafood Paella. These are not in any kind of order just some of the best I have found.

I had one of the best Rissoto dishes I have ever had at Retrovo's in East Greenwich/ Warwick RI
The appetizers at Zooma in Providence are great especially the Calamari.
For breakfast it would be a toss up between Nick's on Broadway's Fritatta or the Liberty Elm Diner's Huevos Rancheros.

Chinese Chicken Wing Recipe

The chinese wings at the Islander are pretty good, so here is what I think you will need for this recipe. Rice wine, Teryaki sauce, brown sugar, garlic, sesame oil, oyster sauce, and corn starch. If you like it a little hot you can always add some chili flakes. So I did not list quantities because it would depend on how many wings you are marinating. Go by your own taste, you definately want to marinate them for a few hours in the mixture. Brown off the chicken a little in the oven then pour the marinade over the wings and finish. The corn starch will thicken the sauce and you will be left with a sticky four to five napkin appetizer. I hope this was helpful.

Best Breakfast in Providence (or close by) RI

Liberty Elm rocks! The only thing I can't figure the spice they put in their homefries. I can not decide if I like them or not. Never had a bad meal there, staff is always freindly and attentive. One of the jewels in our little state.

good breakfast place in RI?

Thanks, I have never been to the Cozy Grill before, we have been to T's back when it first opened and when they were serving the breakfast calzone which was awesome. Now for some reason they do not have that item on the menu. We really enjoy the Liberty Elm Diner, I just thought of trying some place different tha the whole family might like.
