Farewell, Foie Gras: I'm Not Sorry to See You Go

I'd like to point out that monkfish liver tastes very similar to foie gras. Very similar. It still involves killing something (monkfish instead of ducks), but at least it doesn't involve force feeding animals. It's available at some Japanese restaurants, and I'm surprised they haven't marketed it as a humane alternative to foie gras. Maybe that'll happen in CA.

How to Charm Your Sushi Chef

I was born and raised in Japan. Chopsticks never touch my lips when I eat? Of course they do. I have no idea where the writer got such an impression. I, and other well-mannered Japanese people I've dined with, put the food in the mouth, close the mouth, and pull out the chopsticks. Whether my lips touch the chopsticks has never been an issue in the table manner discussions. You don't suck or lick on chopsticks alone, of course. But when you deliver food to your mouth, it is more desirable to close your mouth on the chopsticks as it naturally happens. It's not only natural, but also prevents unsightly food particles on chopsticks.
