Shun Knifes?

The 2 globals I have are a 2 sided sashimi and a Yanagi. Both 10 inches which is the perfect length for sashimi.

Actually, a couple months ago I bought a Yanagiba knife off of Amazon for under $50 and it has been amazing for sashimi. I don't want to say that I would put it up against my Globals in a sword fight but it holds up. The only neg is that you need to keep the handle clean and re finish it with oil every few months. Shun Knifes?

I am looking for comfort and performance. I work at my restaurant for about 10-12 hours a day and I need a knife that will kep up w/ me. The look of the Shun's are nice but I don't need the looks...I care about performance more. The blade has to be at least 6.75 inches...so, a 7 inch Santoku would be best. Thanks for all of the links...very helpful!

Shun Knifes?

I am looking at throwing $150 down on a Shun Premier Santoku knife. Does anyone have good or bad experiences w/ this brand. $150 is not a lot fo a good knife but I have never used one of these knifes. I work a lot w/ sushi and sashimi but the knifes I own are Mac's and Globals. Please let me know any information you have.

I have seen that omelet pan, never used ut but it seems like it would be a waste. What is the microwave smores maker that you speak of? There would be no way of getting your marshmellow chard like it gets when your doing it over the fire and thats the best part.

It's a Wolfgang Puck Garlic press that I received as a gift. I never said it was difficult to clean, it's just easier to crush the garlic w/ your knife vs having to clean out those little holes. I did not get any cleaning tool w/ mine.

Yes, I agree...it is all about quality. If the quality isn't there then the speed does not matter at all.

YES, I hire people based on their knife skills and speed. If someone can prouce the same quality but in half the time...you bet I am going to hire them over the other. I pay my cooks to do a lot of prep and if I have someone that can do all of their prep in 4 hours vs 8 hours. That is about $50 less that I have to pay per day. We do prep 5 days a week, so that saves me $250 a week, $1000 a month, 12,000 a year...it adds up.

Electric woks are a joke. I see a thousand of them when I go yard saling. They do not get hot enough to stir fry a onion let alone any protein.

I use a lemon juicer for ginger and I will always stand by thinking that the garlic press is a waste to me. Some others praise and that is just fine. My fiance bought me that jerky gun...but I have never used it because I never found a good dehydrator.

What is the worst kitchen gadget that you ever received as a gift or bought for yourself?

I have 2...my mother bought me a quesadilla maker and it was horrible. It flattened everything and unless you added a pound of cheese, it came out flatter than a nickle. Also, a garlic press which i bought for myself. It just so much easier to crush the garlic yourself instead of having to clean that thing.

Best Way to Clean a Burned Stainless Pot?

Here is the real deal...

I use this to clean my stainless stell pots that have food stuck on them. I once had a stainless steel pan that had food burned onto it and it set like that for about a year. This is what my mother told me to do...place a couple drop of dish soap and enough warm water to cover the stuck on mess. Place it on a burner over medium low heat until it comes to a gental boil, remove from heat and start to scrub. It really works!

What was the worst food you HAD to eat as a kid?

My mom was a damn good cook but I did always have to eat my veggies/beans/fruit. I like most veggies and fruits but the worst to me was Lima Beans. She would try to spruce them up but they just never got any better.

I also hated w/ a passion deer meat, it was extremely gamey and dry. I did not grow up w/ a lot of money so when my moms friend had some extra deer meat left in his freezer, she was up for taking it. I don't mind deer meat now but it is not something that I would go out of my way to eat.

Best Sriracha Food you ever have eaten?

Sriracha along w/ ketchup is the best condiment ever. Sriracha should be one of the 5 Mother Sauces. You could easily knock Veloute out of the mix.

What is the best food you have made or tried that had Sriracha in it?

Mine would be 2 recipes that I made...Sriracha Peach Ice Cream and Sriracha Ceviche.

It is crazy how a lot of stuff that we ate as kids while growing up w/ little income has now become popular. Restaurants are now charging a god awful amount for stuff like tripe, beef tongue, sweet breads, etc.

I use powder milk, you can buy it bulk and it last forever

I use my rice cooker religously

If you were to open your own restaurant...

I just opened my own restaurant. It is Fusion Asian w/ amazing food and simple decor. It is a mix between Mexican and Asian food. It has menu items such as Pork Carnita Buns w/ sour onions, schezwan shrimp tacos, pork belly tacos, Barbacoa rice, and much more. Are restaurant differs from other Asian Fusion restaurants because most of them are fused w/ European cuisine...our menu is mixed w/ Mexican cuisine.

I cant find a thread that is about what to use fresh sage on. All I can find is one that compares rubbed and dried. It doesn't really give me any ideas on what to use fresh sage for.

Summer heat still conundrum... frozen fruit the solution.

Here is an amazing drink that will cool you down on those hot summer days. I make it at my restaurant.

1 lb of cubed watermelon (all seeds removed)

1/2 cup of simple syrup

Alcohol of choice (optional)

Work watermelon through fine mesh seive or food mill. Stir in simple syrup and alcohol of choice. Chill for at least 2 hours and serve w/ a mint leave on top.

Sage?

I just moved to a new house that has an abundence of sage growing in the herb garden. Besides Sausage, Roasted Chicken and Duck...what else is fresh safe good with? I often drop it in the deep fryer w/ some fresh rosemary when I fry up some fries. Please give me some good ideas.
