I just don't get the Burger's Priest deification
I completely agree. Great Burger Kitchen I lauded on more than one occasion, and this BP place was nothing special at all. Their burgers are second rate in my opinion. Took pictures of both and GBK won hands down in size and flavour. It's not the best, and being cheapest isn't really an accolade. It's like beer...first you pay for it, then you have to eat it. If it's bad, you pay for it twice.
I also find their burger to be loosely made. Their buns are nothing special.

Mine are always perfect. BP was overdone, and absolutely tiny. I had to go to GBK today, and it's over twice as big and more flavour. The BP burger was something I'd expect at some kid's backyard BBQ birthday party.
BP on left, GBK on right. Fast burgers? There's a drive through not 2 blocks away. I buy food, then I have to eat it. If your time is that valuable, then hire a catering company. I highly doubt these are frozen. It doesn't make sense to freeze then take all that time to thaw out. Also, this is the only outlet they have.

I just got back from there. It's on a griddle, yes.
I got The Cheeseburger. It's tiny. I give it a 5 out of 10. Great Burger Kitchen floors this place. For all those that think this is a good burger, you really should get out more often.
It really is a sad burger. The bun, the meat, everything. I loved their air conditioning though.

Uh, where did this come from? Great burgers from my butcher. They hire full time staff making them, and they can't keep up, as they sell them by the case.

Technically it's in The Beach, not Leslieville. Coxwell is the dividing line, so The Tulip is in Leslieville. Great Burger Kitchen at Gerrard & Jones is an excellent burger. Ethics come secondary to the quality of the product, if you ask me, for any restaurant. GBK has ethics too. I have not tried TBP, but the religious association doesn't attract me at all.

Worst Beer Ever?
The Bavarian Purity Law WAS installed because they were killing people with the crap they were putting into their beers. Belgium didn't have to do that because of their wild strains. So the restriction forced Germany to brew better, instead of tossing in bicycles, shopping carts, old boots, etc. Coupled with their love for chocolates and pastries, it would only be natural to incorporate the widely available tasty carbohydrates found there. Germany...not so much. That profile is found in their foods.
I don't see the world clamouring for a pumpkin ale. A decent session pale ale will outperform any specialty whizbang product any day. Always has. The term session has placement for a reason. Going to go swig back 6 pumpkin ales? I'm sure you'd win some money if you did that.

Beer Hangovers
Fusels are the organic chem that is in your head that stays there. Acetaldehyde is an intermediate. Easily handled by mammals. Fusels are produced in many low termperature lagers. Also, a lot of high temperature ales that have had very little fusels. High gravity is the main reason for fusels. Not sure where you are getting your information from.
What is the deal with beer made from rice?
For a long time, the spec for Bud was best achieved by the brewery in Winnipeg, MB. Revealed at an A.S.B.C. meeting, I think. Neat stat.

I like Mimi as well. The ladies in that place run a very good menu. I get one of their special chicken soups. Fantastic.
ONTARIO Beers worth trying
Well it WAS the Americans that started that concept on the West Coast. It wasn't meant to be an insult, just a pointer to where all this started. American IPA's, as they are called, are not IPA's. IPA stands for India Pale Ale, which is a style that was started for a functional reason, a very long time ago. Cascade-punchy American highly hopped pale ales have nothing to do with that. I'd rather them take on a new name as it confuses the consumer.

Taking a random approach to creating new "styles" solely in the name of trying to be unique. How about perfecting a style given your hardware setup, water supply, etc.? Too many people try to create the new one-eyed green monster instead of rising above the crowd with an excellent historical style.

Doesn't have to be individual bottles. Beers made wrong are simply that. There is a process to the concept of beer. Much of it has to do with sterilization and proper environment to yeast growth, fermentation, wort attenuation, and infection. So you can't say that anything that passes through a brewery is only game for subjectivity. In fact, I think that's what's wrong with the small brewing industry, is lack of importance on basic principles of brewing.
Whole batches and even whole brand campaigns should have been scrapped due to bad practice.

Professor, I'm not mis-applying it here. This is a story from a professional brewing school in Scotland with strong ties to (then) S&N. Lightstruck mercaptans is definitely skunky, which is the term used to describe exactly that.

I've spent many years doing just that, brewing professionally making standard lager. And it isn't purely American. It happens all around the world. And no, there is little craft to it. Building beers for seasons, that is a craft. Adding ingredients to a malt hopper is not a craft. Adding hops to a boil is not a craft.

I can't stand the stuff. He's on that Cascade varietal kick which I think shouldn't go near beer. Too American, and it's not an IPA at all. Taste like Buckley's Mixture.
The "Chew" in French Bread
Hi folks. I'm baking bread now, and I desperately need to get the chew going in my bread.
What do I have to do to increase it? I have most everything else right, but the chew. Crunchy bread annoys my mouth. Chewy bread is much more flavourful.
So what do I do?
