Roasted red and sweet potatoes

Update: I did a test run of parboil and then roast, they were perfect and yummy! Christmas day however, I guess there was was just too much in the oven and the roasting pan with the potatoes was too crowded so they steamed and never got that yummy crisp. :(

There are 16 people for dinner, so that is a lot of potatoes. I am going to try the parboil, I like the idea of the oven time being shorter. I am going to give it a test run this weekend.

This sounds like a great solution to stay out of the kitchen and reduce cook time.

Have you tried it with sweet potatoes? I also will also be adding butternut squash and onions.

Roasted red and sweet potatoes

I am making roasted red potatoes, sweet potatoes & some other root vegetables for an out of town Christmas dinner. I am trying to figure out the best way to do this to avoid too many cooks in the kitchen.

Should I fully roast the day before and then just reheat? Or can I peel the day before and put peeled raw potatoes in ziplock, with or without water? I just want to make sure the potatoes will get that nice crisp. Also can only use oil, no butter because of family's dietary restrictions.

I will not have a car and really like to stay away from national chains, however not opposed to local chains. Hoping to find a few options that are not fine dining. I tend to have a late lunch and skip dinner. Looking for entrees under $15.

Your Biggest Restaurant Menu Pet Peeve

When the description is not what shows up on your plate. I especially irritates me if an ingredient listed on the menu is not included and the waiter, oh we are out of that. Example last week order chicken sandwich with avocado and when it made it to the table no avocado. So at that point you have to have a meal that is not what you ordered or wait for something else.

Residue on pots after cooking beans

Thanks, I put vinegar in the pot last night and let is sit overnight and it worked great! Plus the added bonus that the vinegar absorbs cooking odors.

Residue on pots after cooking beans

I just can't seem to get the residue off the pot after cooking beans. This seems to happen no matter what type of pot I use; hard anodized, Stainless, ceramic or enamel coated cast iron. I soak and scrub and I know it is clean but when the pots drys I can see a white residue. What is the best way to get this off?

I also use a spoon. Most times I use a microplane to grate the ginger into my recipe, very little waste this way.

I need Turkey Stock help!

I made my stock and refrigerated overnight. I removed a layer of fat from the top and reheated. Then stained and it looked great when it was warm. But here is the problem after refrigerating again it seems to solidify to a gelatin consistency. Is this normal? If not, what do I need to do?

Zoe's coleslaw with feta - need recipe

Years ago I spent time in Birmingham, AL and often would have lunch at Zoe's Kitchen, a sandwich shop with a Greek twist. Zoe's is a regional chain restaurant. They had delicious side salads (slaw, pasta and potato) all made without mayo. I fell in love with the slaw with feta and still think about it.

I tried to get the recipe for the slaw, but was told they do not share their recipes. Does anyone have a recipe for a feta coleslaw? I have a barbeque in a few weeks and would like to make this.

Best way to clean Basil and other herbs?

My local farmers market sells bunches of basil and they often have quite a bit of dirt on them. What is the best way to wash? I have tried rinsing and placing on a towel to dry as well as using a salad spinner. Both methods seem to leave the basil bruised, what am I doing wrong?

Only Foodie in the Family

I understand. My family members are very boring eaters and not really willing to try something new. Half of them will not even eat anything green and this is not just the kids! I used to try to introduce new dishes, but I just get irritated when no one would eat what I made. So just enjoy the holiday and remember it is not about the food. Since you can not pick your family, just save your cooking talent for your foodie friends.

I need help from you bakers out there. I often see recipes that call for instant espresso powder. I am not sure exactly the best way to substitute grounded coffee. I always have a dark roast whole beans at home, can I just grind really fine and substitute? What is the correct ratio, is 1 tsp of instant equal to 1 tsp of fined ground?

I do not think I am a coffee snob, but I know what I like. I think most places make the coffee way to week, nothing is worse then coffee that tastes like dirty water, yuck. A good cup of coffee is the best start to the day.

My keys to making my morning latte are:

1. I love my stove top espresso maker, which I had for many years. These do not cost a lot.
2. Buy good coffee beans
3. Grind just before use in a burr grinder. I use have a capresso grinder at a fine setting.
4. Use filtered water.
5. Never wash espresso maker with soap.

Who Should Pay for the Office Holiday Party?

It is tacky to ask employees to contribute! If the company can not afford the same type of holiday party they had in the past then just cut way back. Bring in pizza & salad for lunch, and the company president should make a small speech thanking employees for working hard during hard economic times. There is absolutely no need to have alcohol at a company function, besides it puts the company at risk as the employees drive home.

Employees want to feel appreciated; asking them to pay will breed resentment to owners/upper management. If the company can not afford anything then the employees will be collecting unemployment in 2012.

Do I really need a Burr coffee grinder?

My Cuisinart Burr Grinder died late last year. I purchased a Capresso 560 Infinity Conical Burr Grinder and I love it. This one does not have the "coffee cling" that my last one had.

Using a burr grinder gives me the ability to grind for my mood, espresso, french press or drip.

How do you clean a pizza stone?

I had not used water on it before turning on the oven, so the stone was dry. I was concerned it would crack that is why I first let it heat to 350 then 500 before turning the oven to the self-clean setting. After the self-cleaning cycle, I left the door closed over night for the stone to cool. Thanks for all the suggestions!

How do you clean a pizza stone?

So clean!!!! I have had my pizza stone for about 5 years and always keep it in the oven and just rinse with water, I really never wanted to put soap or any chemicals on the stone. It got to the point that it had a greasy feel to it. I was not concerned with the color, it was very dark, just the greasy film. So after reading the posts, I gave the self cleaning oven suggestion a try, and it worked! It looks almost new.

I was concerned it would crack, but no problem. I heated the oven, with the stone in it, at 350 for about 20 minutes and then turned up the heat to 500 for another 20 minutes, then turned on the self clean. There were some fumes but not bad. I was so surprised how it restored my stone to original color! Thanks for the suggestion.
