You are comparing apples to oranges. Saison is a place to surrender to an experience. To enjoy the food and wine. To take in the smell of the fire, etc. None of the other restaurants, while they may be good in their own right, are in this caliber.
If you have to consider price then Saison might not be for you. On the other hand if you are looking for quality over all else then it is for you. I view the price, while being "expensive" as having value. When you get a half ounce of reserve caviar, fish that costs $40 per pound, the best meats available in the country, and a mouthful of ficoide glaciale grown in a private garden on the Marin coast specifically for them then it is a relative bargain.
Like it or not, no other restaurant in San Francisco delivers this kind of experience.
