Have more time to experiment with my cooking. After all, I've bought all those obscure gadgets (gnocchi boards, spaetzle makers, cannoli forms, etc.)!!
My "Go-to" dinner party dish:
"Chicken a la Pam" as my family has dubbed - proscuitto and muenster layered inside a flattened chicken breast, floured and browned, baked for 15 minutes, then served with a white wine shallot reduction sauce. Impressive, delicious, and actually easy!
My favorite comfort food:
My own cheese enchiladas with tomatillo sauce, served with creme fraiche (or sour cream). Would I be a true Texan otherwise?
My top 5 favorite restaurants:
Bob's Steak n Chop House in Dallas (original location on Lemmon Ave) , Tao in Las Vegas, Captain Tom's in Katy, Texas (best, cheapest seafood ever), Teppo in Dallas (the finest sushi you will ever have), and Pop's Pitt in Brookshire, Texas (best BBQ on earth-tell 'em Pam sent ya)

My own notebook of printed soup recipes that I have collected over the years. Spattered, some are even burned, but a family heirloom! Must also mention Joy of Cooking - a must have for every cook.
