Easy Quick Pickles

Just a small correction. The "baby carrots" in a bag are no longer whittled down mature carrots. They were originally but they now have a strain of carrots that are specifically grown for baby carrots that are only about a half inch by six-nine inches when mature. That said I do agree that you should use fresh baby carrots from the local farmers market for best results.

Eggplant and Mushroom Polenta Bake

My wife made this last night. To be honest I wasn't sure that I'd like it not being a big eggplant person but it was surprisingly good. It could use a little more red pepper as its a little flat tasting. We didn't have any plain green olives so we used a a jar of pimento stuffed green olives. The little bites of olive were deliciously salty and added overall experience.

The fontina cheese was good but we felt that any number of other cheeses would have been just as good.

Any Suggestions for Chama or Dulce NM?

I realize that New Mexico isn't in the mountain states but Chama and Dulce are just across the Colorado & New Mexico Border so I'm hoping that someone might have some dining recommendations.

I'm going to be in Chama for four days so I'm looking for comments on food.

Need suggestion for Denver & Colorado Springs

Hi,

I'll be passing through Denver & Colorado Springs in about a week and would appreciate some suggestions on places to eat.

We are pretty much open for any kind of food that's good and looking more for places unique to Colorado than chains even if they have good food. Pizza, Italian, Asian, BBQ, Japanese, burgers... almost anything except Indian or German.

We'll fly into Denver early evening Friday July 8th and be spending the night at the Hilton Garden Inn Denver South/Meridian so someplace between the airport and the hotel or in the area of the hotel.

A good breakfast joint would be appreciated as otherwise it'll be the Waffle House. :(

On our return trip we are planning on taking the cog railroad up Pikes Peak so breakfast, lunch and dinner suggestions for Colorado Springs would be helpful.

We'll be spending a one to two days in the Denver area on our return trip and are open for suggestions on things to do and good places to eat. We haven't made hotel reservations for the return but will probably stay near the airport so we're looking for breakfast, lunch & dinner places.

Probably go out to Golden one day to a museum so breakfast, lunch?
