Smoked Salmon and Bagel Breakfast Casserole

(I wish I could post this without assigning stars, as a comment instead of a review, since I haven't tried the recipe.)

@Chefmyron: The lox isn't baked. It's added on top after the casserole comes out of the oven.

This recipe would be interesting to try, although there is something very satisfying about assembling a plate of bagel & lox.

What are you baking these days? August 2011, part 1 [old]

Many of the competitions at our State Fair don't require an original recipe. The phrase flummoxed me, too: Is any recipe really original? But I figure if I make enough changes to something, it becomes my own.

Started baking the other day for the state fair. So far I've done hamburger rolls and cinnamon swirl bread, plus tested a couple of cinnamon roll recipes. Right now I've got challah, rye, and italian breads started.

Woman suing Nutella over false nutrition claims

Right. I think all of the cereal commercials I've seen say, "Part of a balanced breakfast." Bowl of cereal, toast, fruit, OJ. Thing is, you could remove the cereal and it would still be a balanced breakfast.

*August 2011 Cookbook of the Month Companion Book, PALETAS by Fany Gerson

I have the Zoku quick pop maker. I've only used it a couple of times (part of the reason I'm looking at Paletas is to use it more), but it's nifty. And you can't beat the almost-instant gratification. I just keep it in the freezer next to my ice cream maker insert.

The instruction booklet said there are some things you can't put in the molds: Carbonated things... maybe artificially sweetened stuff? I don't remember. I've never tried to make a Diet Coke popsicle, so no problems there.

AUGUST 2011 COTM: WORLD VEGETARIAN BY MADHUR JAFFREY

I just today picked up the cookbook from the library. Like smtucker, I was surprised at the book's size: That's a lot of vegetable recipes! I'm very excited try some of them and expand my horizons a bit.

Sounds delicious! Let us know how your attempt turns out. Prosciutto & provolone bread sounds like it would make excellent toast.

Really Basic Chicken Curry Recipe?

Oh, I've just gotten Jaffrey's "World Vegetarian" from the library for COTM! I don't think I've ever had any kind of Indian cuisine before, and they were kind of an impulse buy. I came across the webpage for Aarti Party on Food Network and saw a picture of some curry dish and it looked tasty.

I got two kinds of curry: One powder, and one that has the whole spices all mixed together. I needed an excuse to use my mortar and pestle. =) If all goes well, maybe "Invitation to Indian Cooking" will be next on my library list.

Just did a quick search. Is it the "brown butter tart crust"? I just got myself a tart pan; I need to try it out!

My birthday's in August too, but I've never made myself a cake. Maybe I'll make one this year, or maybe some cannoli. Yum.

Yesterday I made chocolate almond cookies I found on Gojee. No flour, just almond meal. Very tasty.

Awesome; thank you everyone! I'm going to have fun messing around with this. Seems like the kind of thing that would make good leftovers, too.

Food Scars - Things you will never eat again.

Yogurt with Grape Nuts has been my go-to breakfast. Until now. Thank you very much.

Blech.

Really Basic Chicken Curry Recipe?

(I did a quick search on Chowhound and the Net, and didn't quite find what I was looking for.)

I just bought a couple of kinds of curry powder from a spice store on an impulse. Basically, I want to cook it with some cut up chicken breasts and make some kind of sauce out of it, then eat that over rice. I know nothing about Indian cuisine, as I'm sure my last sentence demonstrated. A lot of the recipes I found called for things like coconut milk, which I do not have.

Right now, I know I'm supposed to saute some onions and garlic, then add the spice powder to bloom it. Not exactly sure where to go from there. Sorry if this is a really stupid question, but can I get some easy suggestions?

Ha! I just had Grape Nuts last night. I'm going to start calling it wheat gravel now. Maybe I'll mulch my garden with it, too. =)

Foods that unreasonably gross you out...

I've never been able to bring myself to try cottage cheese. I think it's like rice pudding: You either love it or hate it. My daughter loves it, and thinks of it as lumpy ice cream.

Why is US fastfood chain so boring while in US?

Well, gee, why bother going to a foreign country if you have no interest in even trying the cuisine? I'm not a particularly adventurous eater, but I figure if I try something and really don't like it, I can grab a snack later.

And I want a prosciutto e formaggio panino. Even though it's just a fancy name for grilled ham and cheese. =)

Why is US fastfood chain so boring while in US?

I've had the same experience with Subway being pretty consistent. My husband and I were friendly with the former manager at the Subway near our house, and when we travelled, we'd bring her back menus or napkins from Subways in Germany or London or whatnot. The menu seemed to be a little more limited; for example, the sandwich would come with standard vegetables, and you had to ask if you wanted something different.

Why is US fastfood chain so boring while in US?

I've definitely noticed some menu differences in fast food chains at different locations. I went to a McDonald's in Germany that had cherry milkshakes (I wish they had those here.), The biggest thing I noticed was years ago, when a fast food place (don't remember which) in Maine had lobster sandwiches and stuff.

Incongruently-named/Silly/Misleading Recipe Names

My first time at a nice restaurant (I was 17 or 18, and on a date), I had no idea what anything on the menu was, so I ordered sweetbreads, because I like sweet things and bread. Very tasty, still no idea what they were. It was only when I got home, and my dad started chuckling when he asked what I ate... =)

I don't know if they have a different name, but we always called them seven layer cookies. The Italian bakeries in NJ (where I grew up) sell them. It's a very small cookie, comprised of three layers of almond-flavored cake (colored red, white, and green), separated by layers of jam (apricot and raspberry), and then the top and bottom covered in chocolate. Best cookies ever.

I'm thinking almond essence must be something different, more concentrated than almond extract?

cowering in fear

I bake all the time and only use salted butter. For whatever reason, I rebel against the idea of needing two kinds of butter in my frig. (Although I do have a package of Kerrygold salted set aside for something special.)

If a recipe specifically calls for unsalted, I use salted and just decrease the amount of salt in the recipe.
