Thai Red Curry with Kabocha Squash

It was good, although I probably could have added more ginger to it to get a needed kick. I used butternut squash and added half a jalapeno. It still needed a kick. I couldn't have guessed part way through as it tasted real *hot* while the squash was still cooking down. Maybe it was b/c I simmered the dish a bit longer than needed? I think if we ramp up on the ginger and jalepeno and ease up on the coconut milk, and stick to the suggested cooking time, this dish will turn out perfectly for us.

Baked Chicken Breast

If you think this recipe is bland, I recommend doubling the thyme (if you only have store-bought thyme), using parm instead of Swiss, and adding a good amount of that fresh pepper. I ended up needing the whole 40 minutes (for 3 breasts), but that is because I used more milk than the recipe called for. I tend to prepare meals by instinct rather than measure out in advance or calibrate according to the recipe as I go along. It came out pretty juicy with that extra milk!

South Indian Spiced Chickpeas

All this needs is a little sprinkle of chilli powder or a whole chilli added in with the spice mixture. It's deeelish!

I also added julienned carrots to give it extra texture and color.
