Dovetail or Picholine?
For me the clear winner is Picholine. Have done several of their tastings (varying the amount of courses) and we have NEVER felt underfed and the food has never been less than wonderful. The service had a little hiccup a while back but I think they've regained their footing. Dovetail for us has just been okay but I will say I didn't think the portions were overly small.
If you choose Picholine (which obviously I hope you do) we tend to prefer the front dining room to the rear but I'd be interested in hearing what others think about it.

The NoMad restaurant has a carryover from EMP:
Tagliatelle w/ King Crab, Meyer Lemon, and black pepper. Sounds simple but so delicious.
red sauce Italian near the Theater District- Trattoria Trecolori, Puttanesca or somewhere else?
+1 for Trecolori, it's convenient, nice interior, and the food is quite good especially for being so close to tourity areas. It's not really what I think of when I hear "red sauce" place but it is good Italian.

We've walked past it many many times but never went in. The menu looks interesting and good but is it really as loud as people are saying? I really hate loud.

ellenost - do they also do an extended version of the vegetable menu (I would assume so but you know what they say about assuming). And is it still a $150 supplement for the extended (not included any supplements based upon selections).

Oh, interesting, I have avoided getting the lobster dish because I thought it would be an almost carbon copy of the prep that has been on the EMP menu for a while now. But if it's still in the shell it must be entirely different.

I think EWSflash was being clever with interpretation of wording. The OP asked who MAKES as opposed to something like who PREPARES.
That being said The NoMad makes a decent marrow dish, Blue Hill at Stone Barns makes a fantastic marrow bones sliced long ways. And even though it doesn't apply the hands down best marrow I've ever had was at St Jones (but I had to mention it).

Sunday Supper at Public is a FANTASTIC deal, great suggestion.
I will add Parm to the list for great simple food and the counter seating.

First, let me salvage some of my dignity by giving some back story. As part of the Manhattan Cocktail Classic we went to an event (and I use that term very loosely) at the bar upstairs at the Lamb's Club. Knowing we would be there and that we would need food afterwards I made a reservation for the restaurant. I should have used the cocktail event as my "canary in the coal mine" and cancelled the reservation but unfortunately I did not. SIDENOTE: I just realized I've already used more time then I think this restaurant warrants so I'm going to cut to the chase.
The space makes you feel as if you are eating in a themed Disneyland restaurant.
The food is uninspired and ridiculously overpriced but the ingredients seemed good quality and the taste was okay but again, zero points for value.
Our (and I hate to use this term because it was undeseved) Captain lacked even a glimmer of interest and seemed to always be looking somewhere else when "interacting" with us.
Every diner in the place looked bored out of their minds. It's also looked like a very touristy bunch. A couple of small children being completely ignored by their mother must have run to the restroom and back at least a dozen times without a hint of discipline.
We could not get out of the place fast enough and after seeing the final bill we realized how many other places we could have gone and gladly spent the money.
I think I better stop now, I'm just getting angry thinking about it.
The Modern Dining Room
You may want to do the 4 course instead of the tasting, you could each order differently and then sample each others choices. Some of my favorites are the Alaskan King Crab Cannelloni, Rabbit Terrine, the lobster tail, fallow venison.
On another note, contact the restaurant and request the two top table along the windows center, it's the nicest, quietest table. And if you enjoy cocktail also make arrangements to have a drink on the patio prior to dinner.

WD-50 is certainly innovative but not in the same class of fine dining as Per Se and EMP. IMO for the total experience the nod goes to EMP for it's wonderful blend of incredible service, personability, atmosphere, and of course, it's spectacular cuisine. Some may give the food category to Per Se (tough call) and some may give the innovation to WD-50 but for all around fantastc experience go with EMP.

+1 for Bar Boulud, outstanding in all categories you mentioned, i.e. charcuterie, terrines, pate
I have another suggestion that's a bit of a dark horse but I have had some great meat, cheese, pate at Beecher's cellar, selection is limited but everything has been excellent and they have some great cocktails as well.
Daniel or EMP?? Which is a better experience?
My experiences at both have never been less than wonderful but they have taken very different paths to get there. As others are stating; Daniel, very elegant, very professional, dimly light, incredible food using best ingredients usually skewing towards classic techniques. EMP, classy, airy, playful, incredible food using ingredients at their peak, riskier (in a good way) preperations utilizing variations on classic techniques. For me it comes down to what mood we are in, if you are feeling playful - EMP, if you are going for a refined sophisticated vibe - Daniel

PARM - Cute place with simple food made extremely well
Just had lunch at Parm the other day and just gotta say we loved it. Really tiny place but we didn't feel crowded, extremely friendly service, and the food was simple and great. I had the Saratoga Club sandwich, GF had the eggplant parm, we shared a side of the pickled veggies (these are a must have). The (now) famous ice cream cake was for dessert even though we were sure we couldn't fit it (we ate every bite). From the look of plates coming and going EVRYBODY was enjoying their food. Oh, the beet Negroni is crazy good.
Per Se Lounge or Le Bernardin Tasting?
They are such compleltely different experiences that it would be hard to give an answer.at is more important to you, surroundings or food? Le B dining room will be more of what you would consider traditional fine dining whereas Per Se salon will be the same incredible food and service or the main dining room but without the main dining room. Some people would consider it a lesser experience and I'm concerned you would feel cheated as diners walked into the main dining room while you are in the salon.

New York EMP Lunch
What Kathryn was asking is would you prefer to have the duck as part of the 4 course or would you like the duck as an additional course added to the standard 4 course at additional cost the duck is the duck is the duck, no different preperation.
