Do Americans Go Out for Pizza Anymore?

Not when you add the delivery fee and the tip together. The pizza place I frequent is a little over a mile away. Also, on Mondays, they have a lower price for take-out.

Braiser/Rondeau

I have the medium sized braiser (left side picture). I have used it for small chuck roasts and a chicken thighs and rice dish. I also have a medium sized French Oven but if I had to choose between them I think I'd keep the braiser.

Help me match each pan to a brand

The $200 price of the Demeyere Atlantis 11" frypan is the sale price. When I first looked at Demeyere 3 years ago the price for that piece was higher than that. As I said the 9.4" frypan costs more. Sometimes at Thanksgiving and Christmas you can find even better deals. I haven't seen the Industry line but the details given imply that it doesn't use the Tripl'Induc layers that Atlantis does. I have an induction cooktop and the Atlantis works very well on it.

Right now Cutlery and More has the 11" proline on sale for $170.

Venting for an induction cooktop

I have 30" induction and OTR microwave. I did it because I was very limited in counter space and overhead cabinet space. If you don't absolutely need OTR microwave go with a real range hood. If the OTR microwave dies I am thinking I will replace it with a real hood and relocate the microwave to the utility room. You don't need a really powerful range hood like you would with high BTU gas burners.

Help me match each pan to a brand

The Demeyere Atlantis 11" frypan is usually on sale. It has a good weight and even heating. One of my favorite pans. I also have the 9.4" frypan but that is more expensive because the 11" is a better seller.

You might be better off with the lighter All-Clad for the saute pan and the sauce/saucier pan.

With this suffering heat, what do you find to be most satisfying for lunch and/or dinner?

Deli chicken, turkey, and ham in sandwiches or salads. Microwaved corn on the cob is easy and good. My produce store has had beautiful Bing cherries in bags. Raspberries and strawberries and many other fruits are also available. I live alone so no need to get fussy. I eat the cherries off the stems and the berries are put in a bowl and sprinkled with a little sugar. I buy almond biscotti also. Sugar snap peas are quickly cooked in brown butter and sprinkled with some salt.

Don't forget take-out.

ONE is NOT enough... IMO

I have multiple tongs - most have a rubberized tip and some are shorter than the others. I like short tongs for working because I have more control but longer ones are needed when using the braiser so I don't get spattered.

Separate spatulas for cooking versus baking. I don't want onions and garlic getting on my baking spatula.

Several different whisks and I still use a fork at times to whisk ingredients.

How does hard anodized aluminum cookware fit into the equation?

It doesn't take a lot of elbow grease. I'm just saying that the hard anodized surface can stand up to the green scrubbie which is not something I would use on stainless steel. My older Calphalon were quite easy to clean. I'm impatient and sometimes I turn a piece of chicken before it's ready and a bit of it sticks. The first time I made hash browns I had a bit of mess to clean.

How does hard anodized aluminum cookware fit into the equation?

Before I got my induction cooktop my fry pans were Calphalon Hard Anodized. I think I bought them about 20 years ago. I liked them very much; good heat control and easy to clean as you could let them soak and use the green nylon scrub with them. One piece I had was a try-me piece; a 7 inch fry pan that was a little thinner material. I used it for eggs and rarely washed it with soap but just used hot water. That piece would get so slick. I gave them to my niece and she was happy to get them.

Demeyere Atlantis Stainless-Steel? How does it work for you compared to other pans?

The Viking V7 saute pan has aluminum in the base. The Demeyere Atlantis saute pan has copper. The Demeyere Proline frypans have aluminum and are heavy but not uncomfortably so.

Demeyere Atlantis Stainless-Steel? How does it work for you compared to other pans?

I love my 2 Atlantis frypans. I have an induction cooktop. The pans heat up well, the handles stay cool. When I rinse the pan in hot water I can feel the heat transfering thru the bottom. I often pan fry a steak right on the cooktop; generally don't put it in the oven because the steak is not that thick. I can cook two pieces of beautifully even looking french toast in the 11". In cleanup i often use Bon Ami if soap doesn't do it and sometimes a white vinegar rinse because my water supply is heavy in calcium. I also have two saucepans and a casserole of Atlantis.

I am very happy with my decision to purchase these pans. They will get fine scratches with use tho but they do the job intended very very well.

Yes, the dark chocolate chips and pecans are Chesapeakes. Nantuckets have dark chocolate chips but no nuts.

What is more useful for you? Saute pan or Frying pan?

When I got my induction cooktop I replaced my frypans but because I had a LeCreuset braiser I didn't replace the saute pan. I don't have the wrist strength to toss and flip.

Lids for Demeyere skillets (where?)

I use the lid to the 5.5 qt casserole on the 9.4" fry pan. You might be able to order the lid thru Sur le Table or Knifemerchant. I don't think Demeyere makes a 12.6" lid. Additionally, there are such things as lids that fit multiple size pans; they have concentric rings in the undersides.

I googled and wayfair.com carries the 9.4" lids. I have never used this company so know nothing about it.

"Least Favorite Vegetable" Poll

I would find it easier to list the few vegetables I like than the ones I don't. Usually have to use butter or cheese to eat most. I like raw carrots, raw onion in hamburgers, iceberg lettuce, romaine lettuce. I like butter with my sweet corn on the cob and white potatoes tho I often eat redskins with just salt added. I don't care for celery stalks alone because of the strings but like celery finely diced into seafood salads.

I'm not a fan of peas in general but I have a few ways I like them - as a bit player in chicken pot pie filling, tender young snow peas in a stir-fry, tender young sugar snaps cooked, pod and all, in brown butter and sprinkled with kosher salt, and young peas fresh off the vine, shucked and eaten raw.

Range Hood vs OTR Microwave

If you are adding external ducting go with the range hood. I have a recirculating OTR and while it is better than nothing it doesn't really handle even simple frying well; even if ducted out the capture area is small.

White induction ranges?

Your best bet might be a cooktop over an undercounter oven if you want white and induction. Look at Electrolux, GE, and KitchenAid. If you buy a cooktop and oven from the same manufacturer, chances are better that they will fit one over the other.
