What are you baking these days? September 2011, part 2 [old]

I made David Lebovitz's "Whole Lemon Bars" this morning and everyone who had it raved about it! It made me look like an excellent baker! (although I overbaked the filling hahaha but it still went down well!)

Zuni Cafe Cookbook: Seafood/ Poultry

Made the Zuni Roast Chicken with Bread Salad over the weekend and it definitely lived up to its hype! My husband loved it and thought it was one of the best dishes I've made (he also liked Dorie Greenspan's Roast Chicken for Les Paresseux). Definitely a keeper!

Dieting recipe help - I need to loose weight without starving him

Why not focus on protein? That will keep you satiated for longer and he can add in carbs as he pleases. Remember you don't need to starve yourself to go on a diet (like extreme low cal diets, because the quickly you lose the weight, the easier it is to put back on). If you are interested, go to leighpeele.com and learn about the science behind fat loss. It's all about tracking what you eat (however boring that may be) but it's the best (and i guess, healthiest) way to do it. Fat loss isn't healthy, but it should only for a short period of time. I guess more than anything else, also look at your eating habits. Good luck!

I agree. Kapiti has one of the best commercially available ice creams, but too bad their flavours aren't inventive enough (or should I say, very tame). That's the reason why I love B&J ice cream and their crazy flavours! :)

The best gelato in NZ however is in Auckland- Giapo. Another good one is Wellington's Kaffee Eis.

What are you baking these days? September 2011, part 1 [old]

It's spring in NZ and I feel like making a decadent chocolate cake... I haven't selected a recipe yet... still on the lookout for a fudgy-brownie like cake. I think I should go with a flourless cake since I like my cakes/brownies to be rich/decadent. I made Hershey's Black Magic Cake the other day and wasn't really impressed with the taste... it was moist but I thought it lacked the oomph. Not sure what it is... probably butter. :)

I made the Black Magic Cake last night and had a taste of it today. It was very moist, not too sweet although I didn't feel it had enough chocolate taste. Does the Double Chocolate Layer Cake taste the same as the Black Magic Cake (frosting aside)?

Most COMPLICATED Dish You Ever Made

Anthony Bourdain's Cassoulet from his "Les Halles" cookbook. It was my DH's birthday and thought about doing it. Took me three days (and a lot of $$$) to complete it! It was really good (because I put in more than the amount of pork fat that was called for!) and very rich! Heart attack waiting to happen in a dutch oven.

That said I still think that the Cassoulet I made was better than the one I had at a SFO French bistro. :P

I see... I might not waste my calories on NM's brownies then. I think I am the same as you, I love brownies with a more pronounced chocolate flavor, rather than sugar. And I also prefer it to have less amount of flour.

Try the recipe, I'd love to hear your thoughts about it!!!

Brownie showdown (DL vs NM)

I made David Lebovitz's "Robert's Absolute Brownies" not too long ago and was in love with the texture and the crunch provided by cacao nibs. I loved how fudgy and the fact it wasn't intensely sweet. I loved everything about it!

But being the recipe whore that I am, I want to know if Nick Malgieri's "Supernatural Brownies" will top that. I tried searching the boards for comparison between the two, but haven't really found any. All I know is people are raving about NM's brownies as their go-to recipe.

Would love to hear your thoughts! :)

thanks Amadaun and Prasantrin on your recommendations! Will definitely keep my eye out on these places you have mentioned. I'm pretty sure Winnipeg will be a lot better than NZ in terms of food... :) Can't wait!!!

I've made one recipe from this book - Classic Carrot Cake with Cream Cheese Frosting. Gave it as a present to a friend and got really rave reviews about it. It was devoured instantly... too bad I didn't get to taste it... maybe next time.

"Whole Foods/TJ" type groceries in Winnipeg

Hi there

We are moving to Winnipeg probably early next year to live permanently (currently in NZ) and I'm really excited about moving to a bigger country with more food choices (and cheaper at that too!). I'm already doing a bit of researching in terms of where I should be getting my foods from. I have found the website for Farmer's Market, but I was wondering which grocery stores are similar to Whole Foods/Trader Joe's and if you can share the names that would be great.

Is it also quite easy to purchase Valrhona/Callebaut chocolates for baking? I love to bake and love going to restaurant specialty stores. :)

Queenstown - Fergburger!! If you are swinging by Arrowtown, Saffron is quite good too. Definitely try Patagonia Gelato. Vudu Cafe for breakfasts.

adding rum in cake recipes

Hi there

I have a bottle of dark rum that needs to be used and I'm thinking of making a dark chocolate cake with this. I have the recipe for a dark chocolate cake which uses olive oil instead of butter. My question is how much dark rum should I put in? Do I decrease the proportion of olive oil without making the cake dry or too runny? Thanks for your help.

Hi there I am having some colleagues over for ice cream and I was wondering what cake would go well with homemade brownie ice cream (I used the brownie recipe i found on Leite's Culinaria). it's delicious on its own!
