Paul Silver's Profile
Dry-aged Grass-Fed Beef
Whole Foods (Lamar) has Dry Aged and Grass Fed, but I am not sure if they sell the combination.
Need help lighting vintage gas stove
I have a 1950's O'Keefe and Merritt. In my case there is a pilot safety device with a red button that I press and hold for several minutes after lighting the oven pilot light. If the Pilot blows out it is suppose to automatically stop the gas flow.
I have found one company in Austin that appears to specialize in O'Keefe and Merritt.

Professional restoration of the stove can be several thousand bucks.
Whole Foods - Lunchtime Best Kept Secrets and Deals?
If there is an interesting protein on the buffet line I might buy a79 cent roll and make a small custom sandwich for about $4.
Prime Rib in Austin
I thought the portion size at Salt Lick was huge - maybe 3 pounds, and a great value for $20 something, including a bunch of sides.
Tony Bourdain is coming to Austin: Where should his handlers send him?
Nubian Queen Lola's, Fonda San Miguel's sunday brunch, Saltlick for Sunday specials,
Is Canolli Joe's worth the drive from Leander?
I am a regular at Cannoli Joe's and find that if I show up when it is busy the food is refreshed quite often. And I haven't noticed the saltiness.
R I P part II
Dimassi's at Mopac and William Cannon seems to have closed this week. The one on 183 is still open.
Best Hot Chocolate in town?
For a cup of thick and rich chocolate. I go to Whole Foods and get some chocolate ganache from the dessert bar and add just enough coffee to make it drinkable.
Annual Trip (at the holidays) please vet my list!
Fonda San MIguel for an uncommon sunday brunch buffet of Mexican cuisine.
Hudson's on the Bend for Texas game.
Actually Hudson's has, or had, a food cart on South Congress. "The MIghty Cone"
Stopping by the Whole Foods flagship store on Lamar might be a fun adventure.
Lambert's has a notable Sunday Brunch/buffet.
"don't miss" places in Austin?
Places somewhat unique to Austin:
Saltlick BBQ for the ambiance as much as the food.
Fonda San Miguel for fine Mexican dining.
Hudson's on the Bend for Texas Game.
Oasis for an extraordinary sunset view over Lake Travis
Which restaurants do you consider 'healthy'?
Ditto on Whole Foods. And the Buffet has among the the widest variety of healthy choices in town. It is my casual go-to place if I have a crew of mixed dining preferences. I buy a large roll and make up fun and interesting sandwiches from the Vegie and non-vegie options. Over several years I rarely repeat a combination. And rarely spend over $8.
Where is the best FOODIE happy hour in downtown Austin?
As of a year ago I thought the Driskill happy Hour had the best and most interesting food for the price. Half price at HH.

Is there good bread in Austin ?
I am blessed by having a weak palate so that I can be satisfied with tastes and flavors that might disappoint someone more sophisticated. I find that the fresh breads coming out of Whole Foods/Central Market give me the flavor and texture that I want for special occasions.
But for my regular healthy bread consumption I get the Genesis Bread made by Food For Life made from sprouted exotic grains and seeds from around the world and baked into one uncommon nutritious loaf.
It includes:
Teff from the highlands of Ethiopia
Black Quinoa from the mountainous regions of Peru
Barley from the ancient Holy Land
Brown Rice and Spelt from the Far East
Amaranth and Chia from Central and South America
Soy from China's past
Flax and Rye from Northern Europe
Corn from Old Mexico
Kamut from Ancient Egypt
Millet and Sorghum from the plains of Africa
Sesame Seeds from the Near East
Pumpkin Seeds from the Mediterranean
Spring Wheat and Unprocessed Bran from Montana
Sunflower Seeds from the Dakotas
TCA / Le Cordon Bleu vs Austin Community College
Do these schools have a list of graduates whom you can talk to about their experiences after graduation? Perhaps you can find someone who is following a similar culinary path to yours? Also consider visiting the restaurants you admire in Central Texas and ask their opinion about trained chefs: Lamberts, Hoovers, Moonshine, etc. Also ask top Chefs from Europe like Elmer Pramb of Trio. Good luck.
Which restaurants have the best fajitas?
Habanero's Fajitas and Eggs breakfast is tasty and a terrific deal!
stoves
Since you seem informed, who would I call to get repairs done on a 50 year old Okeefe and Merritt? Valves may need to be renovated.
Requests for Recommendations at Asia Cafe (183/Spicewood)
I stopped by the new space yesterday and had General Tao's chicken.
I thought it was wonderful and the portions are HUGE. I ate half and had the second half today.
Next time will be the crispy duck...
Nau's Burger
A Cordon Bleu trained chef took over a few months ago.
They simply do not have the room for a deep fryer.
Hoover's Cooking #3 Inside the Victory Grill
I hope he continues some of the tasty treats of the Victory Grill like the ox tail...

The most romantic restaurant in Austin?
My wife and I enjoy:
A corner table at the Driskill Grill
Dining outside at Trio when the weather is temparate.
Jeffrey's when Johnny is serving.
Jezebel's for the food and cool jazz ambiance.
Shoreline overlooking the Water
Roy's for the big city dining room.
Siena to feel transported to tuscany
Mansion at Judges Hill for an elegant old world space.
Fonda San Miguel for an opulent hacienda experience.
Trattoria Lisina to feel like dining at a Napa or European vineyard
Ultimate BLT
Try Counter Cafe. You can sit right behind the cook and nag them about the crispiness. Their Fried egg sandwich is favorite.
Cannoli Joe's
I generally agree. Cannoli Joe's far exceeded by expectations and for the last year has not disappointed me. I also like finishing my meal with a few scoops of real ice cream.
Nutty Brown Cafe
This is perhaps my favorite venue for Sunday Brunch. Delightful combination of food and environment.
Richard Jones BBQ on South Congress
I remember that they had a great deal on Steak and Eggs.
Cheap, hidden ethnic (or not) eats?
