Is It OK to Leave Butter on the Kitchen Counter?

The butter in the covered dish on the counter never lasts long enough to go bad. I was frustrated by the inverted butter bell method, what I think of as the French butter dish, because it immediately grew mold and the butter tasted off. So the easier, leave it out on the counter, covered, is the better butter method around here.

Gluten-Free Baked Goods without alternative flours?

Here's a new one that I really love: orange flourless cake, made with almond flour. This recipe is close to what I used http://www.martha-rose-shulman.com/re... except I didn't use 6 eggs cuz that seemed too eggy...I used 3. Also added some almond extract. You can find lots of recipes for this. Moist & delicious.

For Great Gluten-Free Baking, Use Less Fake Flour!

I agree: avoiding the fake flours and eating food that doesn't need flour is a good approach in the kitchen and if going out to a restaurant. For baking I like to use mostly almond flour and minimize the use of the all-purpose GF mixes. And if you have a great flour-free crust: give it up! I keep working on one, using almond & coconut flour. It is tasty but I want better texture & roll-ability.

Can I really bake dinner in a toaster oven?

I always thought the photos of a chicken roasting in a toaster oven were crazy: why would I want to have chicken-flavored toast forever after? But now that I have a Breville toaster oven (the smaller, non-convection version) I find I am using it for cooking more and more, so who knows? We bought the Breville because we were tired of buying cheap, dangerous toaster ovens that only lasted 2 years or so. Aside from bagels and pizza, it is great for roasting veggies and warming up leftovers, baking an apple crisp or a pan of enchiladas.

Ginger Syrup

Lame, sorry to say. Recipe made a sugar syrup that tastes like ginger only if you tell people that's what the flavor is. Now I'm trying to figure out how to amp it up. If you want a spicy ginger syrup, double the amount of ginger, shred or mince it, cook longer & leave the ginger in the pan, in fridge, overnight, before you strain it.

Bluehill Tavern Cocoa Puff dessert

Not quite I don't, but I do have a Blue Hill community recipe collection with Blue Hill Fudge cake, the NY Times prize cake of 1951 (!). Recipe has cocoa, coffee, sour cream, butter & egg whites in it, with a coffee rum icing on top. Be happy to post recipe if you like.
