Tamales!

I don't care for smoked gouda, but sounds interesting.

I would definitely warn people about the goat cheese :) The goat cheese wasn't overwhelming- it added a great tartness and smoothness to the other flavors. It sounds like too much but it really was fantastic. I may have to make a couple of these just for me one time.

Tamales!

I actually made the first three, and it was perfect. Three different flavors and they balanced each other quite nicely. They weren't huge tamales so three was a great serving size.

The favorite was the pork with the pasilla chili sauce so yesterday I made another couple of dozen of just those for the freezer. I still have pork so am going to make another batch of sauce and put more tamales in the freezer.

I served with a chipotle lime cole slaw (my dad who supposedly hates cabbage asked for 2 more servings of this!), and a small green salad with orange segments, jicama and a cumin lime dressing. Lots of flavors and textures and they all balanced well. I wish I had taken a photo of the plates.

Hah - DH's vote, too.

What dish do you cook that people just rave about?

My carnitas and salsa verde. I make big batches of th carnitas and freeze and love being able to whip it out of the freezer for a salad, tacos, what have you.

I. Hate. Leftovers!

I generally don't like leftovers either - have no idea why. But I find that if I plan my weekly meals better, then the leftover chicken/pork/beef is easily repurposed for enchiladas, tacos, soup, etc the next day. I try really hard to either plan for no leftovers, leftovers that are meant to be repurposed or just enough leftovers for DH to take for lunch.

Elbows on the table drives me NUTS!!!! For years that was the one thing that my stepmother sniped at me about so every time I see my husband do it, it makes me want to snark at him for it, too, because it was so drummed into me.

Funniest Thing a Server Said to You

This is my husband's story but it's a good one, along these lines. He was a vegetarian for a number of years, and went to visit family in Iowa in the early 90's. They went out for lunch and he ordered a veggie burger.

And received a hamburger with lettuce and tomato. :)

Tamales!

My father LOVES tamales; probably one of his top 5 favorite foods in the world. I love cooking (duh, otherwise I wouldn't be in this topic). So, I went to a cooking class all about tamales last night, took home a few pounds of leftover masa, and wonderful timing, parents are coming for dinner on Saturday night.

Now I'm torn on what tamales to make! All of the sauces are homemade, and I've pretty well perfected my recipes (she says modestly).

1 - Pork with salsa verde/tomatillo salsa
2 - Pork with pasilla chili sauce
3- Chicken with mole
4- Chorizo, roasted poblanos & goat cheese (haven't made this before but had it in a restaurant a few weeks ago and almost swooned it was so good)

Considering that 2 tamales is probably plenty for a meal for this group, along with a salad or something light, making 4 varities is going way overboard. DH suggested I choose only 2 and I'm really struggling! Halp! :)

Pleasing in laws with food

Yep - " Because far too much of my self-worth is bound up in how much people like my cooking". I used to be an incredibly picky eater (it was a control issue related to my parents' divorce and subsequent shuttling all over the country to visit dad and stepmom) but since I've grown up and live in NY, I've become a much more adventurous eater and cook than anyone in my immediate family. Partly it's because if I screw something up, there are 25 delivery options (lol!). I don't have much of a different approach to cooking for my in-laws than anyone else but I see them a lot less and it's always at their house so I try to contribute by cooking occasionally and want it to be spectacular.

Thanksgiving morning caterer needed

Seeking a caterer for approx 50 adults, 75 children for Thanksgiving morning along parade route. This is a corporate event and the third year that we're doing it - first year caterer was fabulous but not interested in repeating; second caterer was terrible. I can find plenty of caterers who will do a phenomenal job for around the $30k mark, but not looking to spend that much. Does need to be pretty high-end and not just a delivery.

Recommendations appreciated!
