Cowboyardee, No offense taken. I have only made a couple of hundred custom knives.
You will never under cut a good knife, because you will never sharpen it enough to under cut it.

Talk about knives

I make and use custom knives. I use high end tool steels. If you are asking if it is worth it? Just as there is difference between a Chevy and Lamborghini. There is difference between knives.
High end knives are sharper and they cut better. Yes, a good tool steel is sharper off a stone. It will also hold it edge much longer. It will also sharpening much easier.

My wife went to Henckels in her Restaurants as the crew knives. You have fight on your hands if you tried to take them.

Spend your Dollars on a good knife instead of of electric sharpener. When I say good knife I mean 50.00 up. Buy one of those 5.00 dual sharpener with carbides and ceramic, Smith makes them. You never have to worry about dull kitchen knife again.
Good Knives will stay sharp much longer, months at a time, they require less sharpening and usually sharpen with a few strokes on sharpener.

Lets make this easy. First throw away your chimney! Go buy a small propane torch from your hardware store. You can get propane anyplace including your grocery store, the green coleman tanks will fit a propane torch @ $2.75 ea. You go from cold to cook in three minutes or less.

Going from gas to charcoal BBQ !

I love Gas!!! I use a propane touch to light my lump charcoal. Most Home improvement stores carry unchromed Webber Grill grates.

knife sharpeners?

A knife edge is like a micro saw edge. What happens over a period of time is the teeth roll away from the center kinda like this )( . When you hit it against the steel it rolls the teeth back to center.The better the steel the less rolling you get of the teeth so it stay sharper longer.

I would look for Diamond stone Sharpener. Chef Choice is made to keep cheap knives going. Spend your money of your knife not your sharper. A good Knife you should be able to hit it on sharpener 3 or 4 strokes and it should as sharp as the day you got it.
