Raw Bay Scallops. Top Quality. Downtown
Hey everybody.
I'm hungering for some scallops. Not sure what I'm going to do with them but I'm looking for bay scallops (ideally still in their shell) as an ingredient for dinner. I live in the East Village and am willing to travel somewhat but would prefer to stay downtown.

Maine shrimp
Raw with very high quality olive oil, lemon salt and pepper. Possibly barely cooked with citrus juice in a ceviche. Do NOT overcook them, they are soo sweet and delicious and will dry out very quickly. If you need to cook them, saute them in a hot skillet for 30 - 45 secs at most maybe some garlic, parsley, o.o. s&p. Keep it simple or you won't be able to taste the shrimp and their inherent sweetness.

panic about newly arrived Olio Nuovo
You don't need to be concerned about the solid quality of the oil whatsoever, but after 1-3 weeks you should rack the oil so that some of sediments are removed. Those sediments are typically removed out of ordinary oil but not olio nuovo. Just pour it into a different bottle and leave the sediment in the old bottle.

HELP! Manhattanite in Mallorca - Where do I need to Eat? NO Wasabi Cream!
So I just landed in Mallorca and all the places recommended to me were lame "forward thinking" interpretations of Mallorcan cuisine. One place had wasabi cream on the menu and I cringed. I am based in Deia and am looking for places that run the gamut from white tablecloth to simple and straight-forward. I do not however want any creams, emulsions or foams. If I wanted those, I woundn't have left the other island in the first place. Help! Please I need the good stuff here.

Jean Georges - the chefs delicate hand and skill with vegetables will leave you wanting. It is truly the finest restaurant for lunch in New York City.
Switzerland recs needed - Lausanne, Interlaken area, Luzern
Interlaken - many years ago my family went to stay at the Grand Gisbach (sp.?) hotel in Interlaken. I truly can't remember the quality of the food but the experience still resonates 15 years later. They bring out all the dogs before dinner and serve them freshly made gourmet dog food on china! There is a fenicular on the property that goes up and down the hillside and the hotel has every amenity imaginable. I highly recommend you stay here and eat here.

Live Uni Sashimi/Sushi
I'm not too sure about uni served in the shell but I just had lunch at Sushi Sasabune on 73rd and 1st and tasted the best uni of my life. In the past, I had been taught that uni from Santa Barbara was the best place for uni. The chef mentioned that I had been misinformed - the waters just outside Santa Barbara are not nearly as clean as those around Catalina Island (so ways out from the coast) home to the uni from Sasabune. It was so clean and so perfectly prepared - it was just delicious. Check it out!

Mashed potatoes! I know it is a bit of a pain in the bum but peel them and mash them and add more cream and butter than one would consider healthy and enjoy!

a restaurant that doesn't put your wine bottle on your table
correct me if I am wrong, but the location of the wine bottle has no influence on your ability to decide what amount of wine you consume. if the waiter is serving the wine and your husband "drinks all his wine immediately" then you're in the hole. How big were the tables? Could the wine have fallen off the tables? Were they wobbly?

celery seed is key for a top notch bloody mary, that and freshly grated horseradish. Always purchase spices in whole form and toast prior to using for each dish. As for those spices that are 1 year old, toss them, they contain only a small portion of fresh spices.

New York City diners are the most priveleged in the world. There is no other city in the world with the breadth and quality of restaurants as there are in NYC. We are a finicky bunch and as a result our numbers are skewed as compared to other cities. Often times chain restaurants in other cities make into the top 50 by popularity and top food in other cities throughout America. A California Pizza Kitchen in NYC has a lower score than other cities throughout the nation even though the product they produce is virtually the same. La Bernadin would likely get a 29 or 30 if it were in any other city in the US.
The point - NYC doesn't have a 29 because we're spoiled.

Where's the boeuf?
A buddy of mine jsut moved into a house that has a wood burning fireplace. Being the enterprising cook that I am, my first inclination was to cook a dry aged porterhouse over some wood. Now the only question is where to get the steak? Lobel's has steaks that include prime aged all the way up to wagyu but $150 for 1 steak seems pretty pricey. BLT Prime also sells aged beef. Help me complete my goal of replicating an Italian mama's meal of bistecca fiorentina. Where should I get this piece o' steer?
