Meals with the masters

Had anyone attended the meals with the masters events that meals on wheels puts on in Wilmington. It's next weekend; Friday night has local chefs and Sunday brunch has chefs from all over the country. The food never ceases to amaze me. I thought they should definitely be on the radar of chow hounds in the area. Cheers!

best crockpot recipe for pulled pork?

I like to cook my pork into crockpot with a beer, a touch of BBQ sauce and water to cover. After 6 or so hours, I remove most of the liquid, shred the meat, add sauce, and cook until ready to eat

Dried beans in chili- just soak or cook before adding?

I usually use canned beans in my chili but want to try dried. I know that I should soak them overnight, but do I need to cook before adding or do they cook in the chili?

Chowhounds' Take on Capriottis Sandwich Shops?

I've actually not yet tried Casapulla's, although I've heard really good things about their Italian hoagie. I really need to get there- if only for research purposes!

Not sure what beaches you head to, but make sure that PoBoys in Milton is on your radar. Talk about a killer sandwich....

Chowhounds' Take on Capriottis Sandwich Shops?

I feel like I should give the disclaimer that I live in Delaware so while Capriottis is still a chain in this area, its a local one. Im probably the only person in the area who doesn't like the Bobbie, but I love their turkey hoagie. It's fresh roasted turkey, they always use fresh lettuce and tomato and have this ridiculous vinegary, crushed hot red pepper spread that they use. I had it once and it quickly became my favorite turkey hoagie spot. There's also a Grilled Italian sandwich that is pretty fantastic. The Slaw Be Jo is also a killer sandwich.

Crack Food Revisited

Just came across this- Lawgirl, there's a place near my work that takes pizza dough, smears it with nutella, rolls it, cuts it, bakes it, and tops with a touch of powdered sugar. Fabulously amazing.

Two people ordering the same dish; ok?

My husband is the same way, unless its at a place that specializes in something specific. I'll usually ask him if its ok before I order just to be nice. Similarly, he will usually order in the same style as me so if I am getting an entree he won't get a sandwich or vice versa. I figure that I have my fair share of quirks- he can have this one.

If you don't have a car, I'd suggest calling the hotel to see what range the shuttle will accommodate. Most airport hotels have one and they may service Swarthmore, Media, or South Philly depending on the radius.

Philadelphia Research Critique Request

Dutch Eating Place has good scrapple, and DT Diner isn't that bad. You'll do well with any diner-ish spot that you find. My personal suggestion is to ask them to cook it on the grill rather than fry it. It takes a little longer, but IMO it makes a huge difference in taste and quality. I enjoy my scrapple as a breakfast sandwich (kaiser, scrapple, little touch of ketchup).
Yeah... I know what I'm having for breakfast tomorrow....

Jakes Wayback Burgers [moved from New Jersey]

I live in Delaware, where the chain originated. I really enjoy the burgers. They're on the smaller side, but feature very fresh meat and good quality topping options. Great milkshakes, too.

Your Favorite McDonald item(s)

I don't go often, but have to admit to a few favorites. Also, as a non-egg lover, I appreciate that there are multiple breakfast options without my having to customize my order and shout out NO EGG a hundred times before receiving egg on said sandwich:
Sausage Biscuit
Iced Coffee (damn good iced coffee)
Small cheeseburger (this is one of my guilty pleasures. Not the double, not the 1/4lber, but the small little one with the condiments, onions, and pickles. Sometimes that just hits the spot like nothing else).

Chick-fil-A's Chicken

I worked in CFA in high school and took part in the chicken preparation. It came to us frozen and was thawed in a very methodical FIFO system. I honestly can't recall 100% if the frozen product was marinated, but I want to say that it was marinated after the thaw. The first team would trim and flatten the chicken breasts. I believe that was when the marinade was added and it was either set aside (grilled chicken) or coated. The chicken was fried in small batches. Few thoughts from my time there:
*I worked in a crummy mall location and even there, I was surprised at the cleanliness and the methods that were in place at our location. I worked all positions and still ate there after I left, which is not what I can say for all places that I've worked.
*If you ask for a revision to your order (no pickles, extra pickles, no butter, etc) they'll make you a fresh sandwich instead of serving one from the warmer. Much better quality.

Supermarket block cheddars?

For cut cheese I will buy Cracker Barrel or Cabot. I just bought some Helava Good on sale, with a coupon, and it was good but not great.

As far as shredded cheeses go, I buy whatever is on sale. I always stick with sharp cheddar or part skim mozzarella.

I'm of the opinion that when melting the cheese, say for mac & cheese, tex mex, or pizza; any brand is fine. Just steer away from mild, as it has less flavor overall.

Desperate for fresh fish place in Wilmington, DE!!!

I didn't realize the date! I do appreciate the link, though. Ho fun is one of my favorite dishes, and the tip about the vinegar and sriracha more than intrigues me. I've always been slightly intimidated by Tasty and will now have to pilgramage there to try it.
As far as the market goes, it really is spectacular if you've never been. Huge, unbelievably affordable, and every Asian product that you can imagine is sold there.

You mentioned a willingness to travel, so I would assume that Chinatown in Philly would be in your limits? i'm not sure of the selection, but there is an underground supermarket with an entrance on 11th Street between Arch and Race Streets. They have tanks there with many options of items, some a little far out there for my taste. I would check for you, but no longer work in the area. Perhaps someone on the Philly board could clarify the findings to save you a trip.

That Crockpot Meatball Recipe that Has Grape Jelly In It

I went to a party while in college and refused to eat the meatballs that I heard were made with jelly. A few years later, at another party, I tried them unknowingly and was floored by how addictive they were. I've now made the dish a few times, preferring the Trader Joe's frozen mini meatballs with one part chili sauce and one part jelly. I prefer Polonar All Fruit or something low sugar. I once made chicken meatballs with half chili sauce and half cherry preserves for a shower and they were out of this world!

I see the pizza truck every week at the farmers market in Rodney Square and he seems to do good business. How is Vicky's fish truck? I drive past each morning and am always intrigued. Looks shady, but that doesn't always equal bad.

Which fast food chain has the most cultish (and maybe even divisive) following?

I will say 100% of my vote goes to Starbucks. People are not only cultish, but can't fathom anything else. I live and work in Delaware and for some reason we only have a handful of these across the state. Our local chain is Brew Ha Ha, which is good and I find it to be a good replacement. I work at a local hotel and regularly have to explain to people that there is, in fact, no Starbucks within a 20 minute radius. You have no idea the level of horror that I receive on a regular basis. HORROR!

My biggest "secret" thing that I love and always do is to eat the cold leftovers out of the tupperware. Pasta or leftover veggies are my main guilty pleasures with macaroni and cheese ranking quite highly. Half the time I actually get a fork; the rest of the time I just pluck a few pieces out with my fingers and pop it back in the fridge for next time.
