Is Chowhound.com still doing maintenace ?

I am unable to go to the website using the icon on my favorites bar . And using chowhound.com . The only way for me to access the site is using a recipe thread that I have on my favorites bar . What's up ? It's been showing the maintenance page now for a couple days . Even when you go to chowhound.com .

Would like to know how to prepare wild goose breasts.

Puffin 3 , What is your brine ratio ? Salt to water ? Or salt and sugar to water ? Also I see you brine overnight .

Lemon thief

As I drove up to my house this evening . I saw the lady who likes to pick fruit from the neighborhood trees . She smiled and muttered something at me , cradling a half dozen oranges in her arms as she walked by . I have a small orange tree in my front yard I planted last year for people to poach off of . Oranges to me are meh . Truthfully I thought she had passed away . It has been awhile since I have seen her .I expect the three ripe ones will be gone soon .

Would like to know how to prepare wild goose breasts.

I really like your recipe . I hope I receive the leg and thigh also . But , beggars can't be choosers . I am also receiving some wild duck this Wednesday . Maybe mix the two ?
A slight problem with my Wedgewood stove . It needs a new thermostat . I have tried to set the temp to 225 but likes to cook closer to 300 . I could do it covered on the stove top on a low simmer and then put in the oven for around 1 1/2 hrs. I have to look for the texture , as you have said . I never take the shortcut . I always go the long way .

Scallions in Italian cooking?

Yes . I have had them in dishes prepared by a close Italian family. Last week I picked up a focaccia topped with scallion from the Liguria Bakery in S.F.; with over a hundred years of baking.

Would like to know how to prepare wild goose breasts.

I have a friend who's coming down this weekend . He's bringing Canada goose breasts which were recently harvested . I would like to possibly barbecue , maybe make a stew , cook in the oven ? I haven't eaten wild goose in many ages . I remember I really liked it , though I have never cooked it . Looking for different ways to prepare . Thanks .

Now that foie gras is legal again in California

I wouldn't think so . Purchased a grade A pound lobe in S.F. last week . It was the first time I ate it . Sublime , pan seared and served on toasted crust less white bread .

What are some of your favorite kitchen tricks that you'd be hesitant to admit to foodies?

Salt and pepper .

Lemon thief

I came to the conclusion that it was a animal . The grass is very high in the yard . It's not trampled . No one hopped the fence with to many obstructions of berry bushes and shrubbery .Also I know the adjacent neighbors .
A friend who gave me all my citrus plants was at my house today .He looked around and found a broken limb with some unripe oranges on it on another small tree . Conclusion : A raccoon who was raised on lemons and other citrus .

Too much Zucchini - help

I'm curious to what variety of zucchini your friend is growing during the winter ? Or maybe they were store bought. I have had winter squash , but never zucchini . I like to grow the Italian Romanesco zucchini during the summer .

Lemon thief

The whole mystery is that I left one lemon on the tree after picking the other . And it was gone this morning . No one enters my back yard except me . I have no gardeners or any kind of maintenance . I have no pets . Would someone risk going back to get one lemon ?

Lemon thief

I know a person who cleaned me out of my blueberries in my front yard this last summer. She looks like around seventy . I don't think she could scale the fence . And if she did , she would not have left the two lemons . That's why I'm not suspecting the neighbors . Also it is right below my bedroom window . No deer around or coyotes .

Lemon thief

I have a small Meyer lemon tree in my back yard. This is it's first year producing. Friday I went out to the back and picked a couple off the tree for my chicken. I went out yesterday afternoon to pick one for my salad dressing I stood there in dismay as I looked at the tree and saw only two lemons. There were at least twenty ripe before . Where did they all go? None to be found anywhere, or on the ground.

After picking the one lemon I had only one left on the tree. I went and checked this morning and that lemon was gone! I have a solid six foot fence with a locked gate. Do you know of any animals that would take the lemons? I do not think this was done by a person. There are plenty of lemon trees in our neighborhood. I am totally baffled. Maybe it's time to get a trail cam. Ever hear of such a thing?

How do you prepare Foie Gras ? And what do you serve with it .

I just wanted to say foie gras was one of the best damned foods I ever tasted .Thanks for your replies. Just had some for breakfast . Pan seared then put on crust less white toast . I purchased just under a pound . Thanks for lifting the ban ,California .

For Steaks - Pan Sear... why Oven?

I never do the oven part . Pat dry , salt , cook on medium turning often . Turn to medium high , turn less often to brown . Test for the doneness you like . Searing is BS to me . Does it lock in the juices . No . Create more flavor . No .

How do you prepare Foie Gras ? And what do you serve with it .

I think I am going to make this one . I like the bread idea . Thinking about having arugula with some cut up cooked beets tossed with olive oil, and lemon as a side. I like the fig jam idea also .
