Attwaters has always cared about their sources, and has a map at Belvedere showing where some of the produce comes from. Ned Attwater knows and uses several local farmers; te results are usually great.

Restaurant advice for Baltimore
Carolina's, on Broadway in Fells Point (look for a blue awning) in spite of the neon "Tex Mex" sign, has reliable Latino food in comfortable surroundings. Their seafood and chicken soups, big enough for two, are outstanding.
Recipe for Szechuan or other cumin lamb?
Does anyone have a recipe they have tried for lamb breast with cumin and spices? And do you need to steam ouit some of the fat, or do the spices cut through it?

Republic Noodle in South Baltimore-- worth returning to
A group of us lunched at Republic Noodle last week choosing a wide variety of dishes. It's a modern Viet-Thai-Korean place on Light Street that treats its food seriously, and most (but not all) dishes were successful.
The calimari salad was delicious, with tender squid covered with a spicy Asian pesto. Grilled tofu salad, udon noodles with salmon in broth, ramen with a nicely charred taste. Good teas. There were a couple of mistakes, but the place is new and the owner and server dealt with them very well. The only failure was the wings: we got three kinds, and all were uninspired and over-salty from the soy auce. BUt I'll be back to taste some of their appetisers and entrees, and maybe for another lightly gingered pear with whipped cream and lime peel

their meat, veg and other raw ingredients are wonderful. Sometimes they oversauce, so I stick to the plainer dishes there. Agree with chefdilletante about the quality of the cocktails. A few things, like their devilled eggs and popcorn, are just a waste of space, but this and Grace Garden are the two stars of the Baltimore area, IMO. Def better than Charleston.

@Steve: so if the broiled leg of lamb wasn't, what was it?
Museums with good food.
Recently at the Museum of American History and had one of the best mac and cheeses ever: a collection of several strong cheeses, slightly spicy, moist and gooey, with crispy edges. At the same barbeque stand was a lightly smoked barbeque chicken. to drink I had watermelon mint juice. Pricy but well worth a visit.
Meet 27 - Baltimore
I had the pork vindaloo too, which was good, and came with perfectly cooked vegetables. But the standout was my friend's peppercorn beef-- I'll go back for that. Just ignore the server's warning that these two dishes are very hot: they are just moderate. A good and friendly place to return to.

Grassfed Burgers and Buck-a-Brew @ Brody's Burgers & Brews, Santa Rosa
I was excited to try Brody too on my way north. Unfortunately the brody Burger was squashed, overcooked, dry and tasteless. I want to encourage good and local food production, but not at the expense of the chow. Chocolate shake was great, but they didn't have to cook that.

We had excellent small plate food in this odd looking, attractively restored restaurant: sweet potato fries (home made, not frozen) with a South western inspired sauce, great little lamb chops cooked perfectly for me, and a good if not exciting greens, pear, pecan and goat cheese salad. I'd happily go back to Avalon if I was ever stuck in Eureka.

Thanks again to sarah2k. Club House was phenomenal: I don't expect a buffet to have first rate rillete, chocolate mousse on a par with any I have tasted or made, gravy that was created from carefully reduced stock and bones, fruit at its peak of ripenes, lovely baveuse (oozy)cheeses, a host of cured meats and well seasoned salads. At 18 euros for lunch, it's a steal.
I'll ask my daughter to write about our meal at L'Aromat.
Worth going from downtown to Pok Pok
Noticed many requests from people staying in downtown hotels. Rather than the expensive fare close by, a $12 cab fare takes you to a mouth changing experience, Pok Pok on Division Street.
Tender pork belly and shoulder with a mix of Thai and Burmese spices (good with ultra sticky rice), baked and fried chicken wings with a third joint you can crunch and completely consume-- ask for spicy as the heat is turned low-- game hen produced by your mythical Thai grandma, with two throaty dipping sauces; and dessert: sweet condensed milk ice cream floating in bitter coffee, with a side of freshly made thai donut-- a contrast of flavors, textures and temperatures. Even the Thai ice tea has far more clarity and strength than most.
This place is exceptional.

Ethiopian in Baltimore
I think both Tabor and Elfegne are better than Dukem. Tabor is full of Ethiopian taxi drivers, friendly. Elfegne has a more limited menu as it is less popular.
But the unique aspect to Dukem is the Ethiopan-style sweet wine it serves, made by a maryland winery.
Carma's Cafe on St Paul and 32nd St, Charles Village
Carma's Cafe is small and not that visible from St Paul Street, but it is packed at meal times with locals, students and professors-- and some of us who come from further afield to enjoy Carma's distinctive cooking. Some specialties to enjoy: homemade yogurt, rich and with a bite; spicy sesame noodle salad, home made soups, cranberry and white chocolate cookies (their cookies will distract even the staunchest weight watcher), a New Orleans style mufaletta, and, a chocolate panini!
Open from breakfast thru early supper, not a fancy or expensive place, outdoor seating in good weather.
Grade B Maple Syrup?
When I was in Vermont I persuaded a couple of farmers to sell me their Grade C: wow, is that tasty... anyone know a source for Grade C in the Baltimore area? I've been looking for over a decade
Good Chinese takeout in Germantown/Gaithersburg?
Peking Palace in Germantown has some really good food on their authentic chinese menu, which often means that the Chinese American food will be good too.

Saturday / Sunday Brunch for Baltimore UPDATE 2010!!
The trouble with buffet brunches is the food sitting there drying out, but you do get to taste a wide variety. Donna's Cross Keys has solved this by having an elegant cold buffet, an omelette and pancake chef station, carved herbed rib roast, and a toaster for the bagels.
The cold buffet includes a sesame snow pea salad, large shell-on shrimp, Caesar salad, Donna's roasted veggies, rich egg salad, fruit, and some Italian desserts. I may have forgotten something. Cost is $19 including a bloody mary, mimosa OR coffee.
The only other brunch place I have enjoyed is the Hull Street Blues Cafe, with pancakes/French toast to order, carved ham, and the rest buffet but frequently refilled. Unfortunately their coffee is not good-- bring a cup of your own.

Broad Street Market in Harrisburg
I notice plenty of mentions of the western shore market, but downton Harrisburg's Broad Street Market has good offerings too:
A fish seller with really fresh fish and dry pack scallops
A PA Dutch stand with organic milk, eggs, duck, chicken, beef, pulses, veggies etc (not cheap, but quality)
A good variety of local pork cuts, and smoky bacon
Great home made cookies, breads and other baked goods
Roasted chicken and other satisfying lunch foods
Golden Gate, a great Vietnamese food stand I have just posted on.
Parking available along the side of the market.
The failures:
Many of the vegetables in the two main produce stand are past their sell-by date, and some are past their eat-by date
The Indian curry stall is second rate, and microwaves all their food.
Give this place a try if you are in the Harrisburg area.
Good pho in Broad Street Market, Harrisburg
The Golden Gate, a Vietnamese stall in the market, has excellent pho: beef, chicken, shrimp, tofu or a combination. I had the "regular size beef and shrimp noodle soup" for $5.95, which came in a large bowl: great broth, good meat, lots of rice noodles, with cilantro leaves, lime, beanspouts, Sriracha hot sauce and hoisin on the side. This and a minty shrimp summer roll made a great lunch. The place is packed at weekday lunchtimes, and I can see why, given the quality and value.
Anyone else been there?
