Buy a tortilla press in Calgary

I know this is an old thread, but I have finally tried my tortilla press from Unimarket. It was $20 and works great. It is not non-stick so one needs to line the press with two pieces of plastic (I use a cut in half freezer bag because it is stiffer than plastic wrap). The press is made in Mexico, so it must be good, verdad?

We get a decent version at Happy Hill on centre St, but can be variable in quality, usually best if the restaurant is quiet. I suspect there are better versions out there, lets here from the other chowhounders!

Chèvre Truffles

Very good, but needed a few tweaks. I just rolled them in cocoa so needed more sweetener, I used triple sec for a hint of orange. I will definitely make again, as they are lighter than cream truffles, and have a more interesting taste.

Roasted Brussels Sprouts with Almonds and Pecorino

Great recipe, though 1/4 cup oil is crazy, you are not deep frying them. I coat the sprouts with at most a tablespoon, and that worked great. Had to use tuscan pecorino, but was still good, maybe because I added crisped prosciutto.

Sushi- fresh vs. frozen [moved from Prairie Provinces board]

Thanks OB! I'm guessing that the poke I ate in Hawaii would not have been frozen, but I never asked. I'm sure that some less than scrupulous shops sell once frozen as 'fresh' fish or that euphemism 'thawed for your convenicence', but unless the fish was caught hours before i eat it, I'd rather eat frozen anyway. Though I've had good oysters here in Calgary, finding fish like on the coast is tricky. Perhaps Banff serves some 'local' fish (walleye, tilapia, arctic char)? No doubt, most or all the sushi in Banff would be previously frozen.

Sushi- fresh vs. frozen [moved from Prairie Provinces board]

I think that it is a rare thing for any sushi restaurant to serve 'fresh' fish. Most I believe is FAS, and thawed as needed. Fish needs to be frozen to kill the little buggers that can make one sick. Some fish is served live, or recently so, such as uni and lobster, but the biggies like salmon and tuna, all rock solid when they get to the restaurant. (Check out some of the films of the Japanese fish markets where they bid on the tuna). It is an old trick to have a fish restaurant near the water to fool the tourists into believing the catch is fresher. We were pleased with the sushi at the Springs, and they used real crab, not pollock.

Winter Holiday at Banff Springs!

Oh memories of Christmas at the Banff Springs...the great thing about it is, you don't have to leave the hotel if you don't want to. We had great sushi on Christmas Eve, and a wonderful dinner at the Waldhaus (which I thought would be a cliche of raclette etc., but i ate a delicious venison pie), and quick and tasty lunches at the Castle Pantry. Also there will be lots of buffets, we had one at the Bow Valley Grill (good), and one upstairs in the ballroom (better). Try the Banffshire club, if your budget allows (mine did not).

Anyone tried dry aged (beef, lamb, bison...) in Calgary? Apparently the Co-op sells beef, and Charcut makes a beef steak at lunch. Is it worth the expense, and where else can one find it?

Thomsons has reopened after an expensive retrofit, according to Avenue magazine. Anyone tried the new menu yet? Not that there is a shortage of downtown restaurants, but I'm intrigued.

Bought a cronut at the sait marketplace today, north campus, not sure if downtown has them. They call them "fried croissants" and they had whipped cream in the middle. $2, expensive for a donut, but worth it, really tasty, not just trendy idiocy, like i was expecting.

Got some at Costco Medicine Hat, because Superstore was out. They were cheap at Costco ($6.99 for 24) but not nearly as good as SS. But If I need my fix, I will take them over nothing.

Don't worry about that, I take all the scape off, down to the main stem. I've read that removing the scape will make your bulb grow larger.

I have been buying what I think is rocambole, I look for the largest, firmest cloves, usually the best is at a farmers market. One of the benefits is that buying local garlic you know it will grow well here, not the case with grocery store garlic. In October, I plant the cloves about 6" apart, pointy end up, and put a few inches of dirt on top, nature does the rest. For me, one of the easiest 'crops' I grow: takes very little space, and very little maintenance, a bit of water and weeding. Harvest when the leaves start to brown, mid to late June, or so. And harvest the scapes when you want, they are fantastic stir fried then tossed in pasta primavera.

YYC Garlic

Easy to grow garlic, far superior to anything I've purchased, even from the farmer's markets. Homegrown is sticky with juice, and a small amount goes a long way. My very small patch is about 10 plants and it will last me over the winter. Then, sigh, it's back to grocery store kind. Thanks Bill, I will seek out the Gilroy, until the harvest is ready. Bonus with homegrown: garlic scapes!
