Here's what I do for a good tortilla stuffing. It's pork shoulder/Raw picnic ham . Slow smoked for 6-8hrs. Lasts along time in the frig. Cut off what you want and roll it up.. Yum

Easy Greek Salad

Perfect Greek dressing..3-1 olive oil& red wine vin./ fresh smashed garlic 1-2 cloves/ some oregano / tsp. sugar / very little lemon juice. stir like crazy or shake to emulsify and combine ingrediants . Try it..same method for Italian vinegrette too..just add some more herbs.

Hey Adam, I know what you mean. Its hard to find a place that is successful and still does the BBQ the old school way. Mainly, because its a numbers game. Long cook times mean higher payroll. So most restaurants put ole faithful out back and move into a commercial unit to keep up with a successful and busy BBQ joint. Not only that ,but training is a constant problem. To have an indepth recipe that is to difficult to repeat by the unskilled labor, isnt cost effective. So your stuck with what you know. There is a place in Clermont on Hwy50 that still has there old pits still smokin. Busy does'nt mean good either.But "old school way " only means the most popular way that anyone can do it in there own yard in my opinion.I'm 45 and have been in the BBQ business one way or the other my entire life. But I've never claimed that I have the best BBQ. But people say I was taught very well,by a pro, by a real "Ole Schooler'" . Your right though about citrus wood.Its great to use as well as any fruit bearing tree. I dont use marinades much ,I prefer a good tangy dry rub.

Eating Shrimp Cocktail in an Acceptable Manner

OMG--1st are you male or female? It matters...but never take the shrimp from the serving dish to another dish...seriously..it will look ridiculous if anyone is watching. (incase your a girl) just eat it with your fingers and make sure you triple dip it (mindful of the horseradish, you don wanna blow junks..so just a taste on the first dip.haha) . Oh and if the shrimp are really big and juicy..you may want to ...oh never mind I forgot what I was sayin... just eat the damn thang already...and if your not payin get another one..However if your a guy...shut up and try not to look stupid. peace out

if you want to eat fresh in key west..go dig up some clams at low tide. look around piers and rocks for the langostinos...and if you get a boat to rent...make sure to take a hibachi and go out towards the tortugas .break of a few lobster tails and grill&release...don't get caught. maybe a hawaiin sling for some snapper..don't become shark food...any shark around4ft is dinner. REd RoBin....yum

Creamy New England Chowdar

Has anyone heard of Shell's Seafood Rest? The only thing superb was the clam chowder. This recipe is as close as you can get to the absolute most authentic recipe....and guess what... it's the bacon that throws it over the top..most people don't know that.... But everyone knows bacon cooking is the best smell ever..My Dad had three seafood rest. in Florida back in the day..good recipes are where it's at.
