I need to organize food ideas (by India's states)

In addition to what you mentioned

Punjab- Amritsari fish fry, aloo paratha, tandoori chicken, palak panner, punjabi kadhi, butter chicken, lassi

Uttar Pradesh- you HAVE to go to Lucknow- any decent restaurant serving nawabi/muglai cuisine will have excellent stuff. try lamb dishes, rice biryani, paaya (if you can)

Rajasthan- laal maas

Andhra Pradesh- Hyderebad has a cuisine of its own. a must-try is Hyderabadi Biryani. you cannot get it anywhere else in the world. a good place to get is paradise cafe. also, try 'haleem' and 'kubani ka meetha' in the old city area. stop at 'karachi bakery' in the city and pick up a box of fruit cookies. you will thank me later.
a regional breatfast item to try is 'pesarattu'.
in addition to that, there are all the kurmas, pachadis, spicy podis etc. you can find very regional andhra food in homestyle restaurants.

West Bengal- poshto, fish curries, sandesh, egg rolls (street food), rasogollah

karnataka- mysore masala dosa (not tamilnadu), bisi bele bath, raagi cookies (if you can find them)

kashmir- kashmiri pulao

i can go on and on but i wont. hope this helps. have fun!

Peanut butter taste tests; PB devotees: what's your favourite?

salvatoregianpaolo...mind telling us how you make PB at home? i tred a couple of was ok but not very spreadable. what am i doing wrong here? i use roasted peanuts, honey and canola oil with a little sea salt.

Vegetable to go with Lentils & Rice?

my favorite is simple panfried potatoes. heat few tbsps oil and add cumin seeds. add diced potatoes and salt and fry until done and develop a kind of golden brown color. add chili powder and may be some coriander powder if you want. they taste terrific with any dal.
you can do the same with carrots or green beans and add garam masala at the and with a tbsp or two of dry coconut powder.

toodie one really makes papad (papadams) in India ...except may be in some rural areas in the the north. it is much much easier to buy. and yes...they are made with white lentils (urad dal) and not chickpea flour. however, if you are really interested in making them, here is the link

Favorite easy pasta dish?

my favorites are Cacio e Pepe, Aglio Olio, pesto pasta with or without toasted pine nuts and shaved parmesan, pasta with marinara sauce with a little cream and white wine. All of them easy and simple.
