Isn't this under the diner's control? Unless you've made a special request to dine in the walk-in, the ambient temperature is high enough at your table that with a little patience, you can get thin-sliced meats to the temperature you desire them.

I've seen some lively parties at Kisaku, unlikely to be a problem. If you feel self-conscious, you could ask for the back room.
Japonessa and Umi are certainly more typically raucous in my experience, but not as good (food or service), unless you're specifically looking for a nouveau sushi experience.

Favorite pork chop in Seattle?
I've had several fantastic brined pork chops at Crow. Unfortunately, it doesn't seem to be on the menu that's up on Crow's website now.

I got the prochetta early in Lecosho's life, and really regretted it--incredibly gristly. Not particularly crispy either. I imagine I'll give it another chance sometime, but it's unlikely to be soon.

I think your heart-healthy reference refers to the dairy among the ingredients, and, in particular, the fat. While it is a common belief that consuming fat is a significant contributor to heart disease, these books by Gary Taub have recently convinced me that it is incorrect.

I suggest making without bacon, but frying or roasting some bacon separately for people to add if they wish.

Yesterday I drove by the house Adriatica was in, and was sad to see that it had been demolished in order to build a big building. Sad! My wife and I had our wedding rehearsal dinner there on the last weekend they were open.
Where to go for dungeness crab
Anthony's Homeport at the Shilshole marina used to have all-you-can eat dungenous crab feeds on Sunday afternoon/evening. I can't tell from their website whether they still do.
The last time I went, which was probably a dozen years ago, it was no more than $20, and you could get them chilled or steamed. They weren't great at serving them steamed, but cold they were fantastic.

Salumi: yea or nay?
Salami isn't my thing, but I still love Salumi. Cold sandwiches with lamb proscuitto, pork proscuitto, coppa, and culatello are all great. For hot sandwiches, porchetta, oxtail, and pork cheeks all rule. Meatballs are fine.

I agree with all of these statements:
- I miss the Dork patty
- felt about a buck-fifty overpriced per burger
- I'm very fond of actual, individual tables
- I miss the wildly chaotic and ever-changing menu, but the burgers are still amazing.
- And most important, they've survived--and it doesn't sound like they would have done for much longer in the old place.
