Diabetic cookbooks?

I think you are better off with low carb cookbooks for what you are looking for. Two good ones are The Low Carb Cookbook by Fran McCullough and the Low Carb Gourmet by Karen Barnaby. My husband is diabetic - his blood sugar is kept in check when he eats low carb and these cookbooks have some good, creative options.

how long will an open bottle of jarred chestnuts keep in the fridge?

I opened them on Thanksgiving so it's been a little over two weeks. The bottle says five days but they don't seem that perishable to me. What do you think?

I know there are certain safety precautions like not stuffing ahead of time and making sure stuffing itself reaches 165. Other than that is it a reasonably safe thing to do? I always remember the stuffing being cooked in the turkey when I was young - and it tasted great!

Stuffing has no egg or chicken stock - will it be dry?

I'm making Roast Turkey with cornbread, apple, sausage stuffing from the Silver Palate's first book. The instructions for roasting the turkey look good and the stuffing ingredients look good. But I've never made stuffing without some kind of liquid so I'm a little apprehensive. I think eggs are more optional. Has anyone made this before? I am an experienced cook but never stuffed and cooked a turkey before! Thanks.

Also - I'm now thinking I'll turn it into soup. If it wasn't cooked totally through, cooled off then put in the fridge all day, and then turned into soup, does that somehow skirt any risk? I know I sound very paranoid!

It was a 5 pound chicken and I roasted for about 90 minutes at 400 degrees. I'm always paranoid about chicken and i always overcook them. I was trying to do it differently this time and now I'm worried I undercooked. The thermometer read almost 170 but I'm never quite sure where to put it. I ate the leg earlier and it was great. But I just went to cut it up and when I cut the breast, near the bone was a little pink and there was a red streak or two. I understand this can be normal near the thigh - what about the breast? Thanks.

Braising uncovered in oven?

Thanks for all the responses! Well the recipe is probably fine but I left it in the care of my husband and it got a little dried out! Right before I left the house it was looking pretty tender. I added a little more water and told him it was almost done. I just got home and see that it's quite dry. It's got pretty good flavor and I will shred it which should help.

I'm in the middle of making David Lebovitz's carnitas. The recipe calls for browning pork chunks and then braising them in the oven uncovered. It's pretty much too late for me to turn back but they are halfway done and they seem brown and tough. I've never braised anything uncovered - is it common? I'm hoping they will soften up towards the end but I'm thinking I should have followed the recipe but covered the pot as in a traditional braise. Thanks.

fridge and freezer broke - not sure if these things will stay good

Forgot to add the thing I"m most concerned about. Homemade stock. It was frozen and will probably have been at room temperature for about 5 hours or so before fridge cools again. I'm thinking this should be dumped although I'm not happy about it!

I threw out or cooked all of the obvious suspects. But what about Cornichons, butter, tahini, olives, tamarind chutney, korean chili paste? They will have been left unrefrigerated for about three days when all is said and done. I'm assuming these things are all basically fine? Thoughts?

Odd request - UES restaurant

Check out candle cafe on east 79th (I think). Not sure the portions are small but it's a very good, healthy vegetarian place.

Is Trinidadian Browning the same as vietnamese caramel sauce?

That's pretty much what I did. This sauce is also somewhat burned. I'm not sure if it's the same, but the carmelized ribs I made are great!

I'm looking to make Vietnamese caramel (for a few different recipes). It seems to be a dark almost burnt sugar and I have a jar of Trinidadian Browning in my cabinet which is a burnt sugar syrup. Does anyone think I can substitute the browning for the caramel? Thanks so much!

The one comment I ever got that really annoyed me was when I was about 7 months pregnant and I ordered a cup of coffee at starbucks. The very young looking male barista said "are you sure you want that". I was shocked! I asked if he had a pregnant wife or girlfriend - he didn't. I then explained to him that it was fine for pregnant women to have a cup or two of regular coffee - especially after the first trimester.

Leftover cheese cubes from party - can I use in phyllo somehow?

I have tons of cheese cubes - cheddar, munster etc. leftover. I also have some frozen phyllo. Any recipes using both? Or great ideas for all that cheese! Thanks.

Whole Foods UES - Rumor or Truth?

The school is being rebuilt and will hopefully open in the fall of 2012. The whole foods is in a part of the building and is slated to open in 2013. we live across the street and while I'm very excited about a Whole Foods, I'm nervous about the increase in traffic. The area is already very congested.
